Kiufte - delicious meatballs from the Balcans



Hello everyone! Today I am particularly excited because this is my first post on the new blog, and I can't wait to see this project of mine grow! ^_^
The recipe I present to you today is really simple and easy to make, but I like it a lot! It was taught to me by my husband and it is a traditional Bulgarian recipe. Kiuftes (or Koftes) are meatballs spiced up with a mixture of cumin and fenugreek - super tasty!  Actually the ones that I have had in Bulgaria have quite an intense cumin flavor compared to the recipe that I am sharing today, but since I am not a great fan of this spice I prefer this version, where the cumin just adds depth to the flavor, without being overpowering.
You could cook these meatballs in a pan with some oil, but I prefer baking them, as it makes for a lighter dish. Here is the list of ingredients (for about 15 meatballs)

500 g of minced meat (pork or pork and beef mix)
2 eggs
one medium onion, diced (about 100 g)
4 tbsp. breadcrumbs
1/2 tsp. cumin
1 1/2 tsp. fenugreek
salt and pepper to taste

You will also need:
More breadcrumbs for coating
Greek yogurt to serve

Note: if you like it, you can add some chopped parsley to the mixture – I forgot this time... :P

The preparation is really simple: add all the ingredients in a large bowl and mix together until combined. Take some of the meat mixture and roll it into your palms to form your meatballs. Roll them in the breadcrumbs to coat them.
Place your meatballs in a parchment lined baking sheet, brush them with vegetable oil (I use peanut oil), and bake them in the oven preheated at 200°, flipping them half way through.
Enjoy them with some Greek yogurt and nice fresh salad :)

KIUFTE - DELIZIOSE POLPETTE DAI BALCANI

Ciao a tutti! Oggi sono particolarmente entusiasta di condividere questa ricetta, perché è il mio primo post sul nuovo blog, e non vedo l'ora di vedere questo mio piccolo progetto crescere! ^_^
La ricetta che vi presento oggi è davvero facile da riprodurre, ma io la adoro! Mi è stata insegnata da mio marito ed è una ricetta tradizionale della cucina bulgara. Le Kiufte (o Kofte) sono delle polpette di carne arricchite dalla presenza di cumino e fieno greco - super gustose! In realtà quelle che ho assaggiato in Bulgaria hanno un sapore di cumino piuttosto forte. Poiché non sono una grande fan di questa spezia, preferisco la versione che vi propongo oggi, dove il cumino aggiunge carattere al piatto, ma senza dominarne i sapori.
Queste polpette possono essere cotte in padella con dell'olio, ma io preferisco la cottura in forno perché il risultato è più leggero, ma comunque gustoso.
Ecco la lista degli ingredienti (per circa 15 polpette):

500 g di carne macinata (di maiale o mista maiale e manzo)
2 uova
1 cipolla media, tagliata a cubetti (circa 100 g)
4 cucchiai di pan grattato
1/2 cucchiaino di cumino in polvere
1 cucchiaino e 1/2 di fieno greco
sale pepe a piacere

Inoltre vi occorrerà:
altro pangrattato per la copertura
yogurt greco per servire


Se volete potete aggiungere del prezzemolo tritato al mix per le polpette, io stavolta me ne sono dimenticata :P

La preparazione è davvero semplice: versate tutti gli ingredienti in una ciotola e amalgamate bene. Prelevate una parte del composto e formate delle polpette aiutandovi con i palmi delle vostre mani. Rotolate le polpette nel pangrattato e disponetele in una teglia ricoperta di carta da forno. Spennellate le con poco olio vegetale (io ho usato olio di arachidi) e cuocete in forno preriscaldato a 200° per 30 minuti, rigirando le polpette a metà cottura. Servite con dello yogurt greco e una bella insalata!

E, come promesso, una piccola sorpresa per festeggiare il lancio del nuovo blog...la video ricetta per queste polpette! E' il mio primissimo tentativo, e sono consapevole del fatto che c'è tanto da migliorare, ma mi sono divertita un sacco! Vorrei produrre altri video, probabilmente non per tutti i post, ma vedremo cosa ci riserverà il futuro :) Per ora buona visione, e fatemi sapere che ne pensate!

Peanut butter pancakes with maple syrup and mascarpone topping


Hello everyone and welcome back to my blog! Today's post is about a recipe I created for the Facebook contest "Sei in cucina". The theme for November is comfort food, and when I read this month's ingredients I immediately thought about pancakes. They are really easy to make and will leave you absolutely satisfied! :D
I think about them as a Sunday morning cuddle, when we finally have time to prepare and indulge in a richer, relaxed breakfast. They are to be enjoyed warm together with your loved ones :) Ideally you would wake up on a Sunday morning and find them already steaming on your plate, but, well...life isn't perfect! ;)
The recipe is inspired a previously published one, and it is slightly modified according to my preferences. I also added peanut butter in the batter.
Here is the list of ingredients:

For the pancakes
1 cup gluten free cake flour mix*
2 tablespoons sugar
2 tablespoons baking powder
1 cup coconut flavored rice milk**
2 tablespoons peanut butter
one egg

For the topping
100 g mascarpone cheese
maple syrup

*I used a gluten-free cake flour mix because I found that it produces softer and fluffier pancakes compared to normal wheat flour.
**I chose to use dairy free coconut flavored milk, because I really love the aftertaste it provides. In this recipe, though, you can barely tell the difference because of the presence of the peanut butter in the batter. Nevertheless I feel that it helps keeping the pancakes lighter in texture.

Start by preparing the topping. Mix the mascarpone cheese with 2 tablespoons of maple syrup and beat slightly until the cheese softens up. Set aside.
In a bowl sift together flour and baking powder, add the sugar and mix well. In a separate bowl whisk the peanut butter until soft, then add in the egg and mix well until combined. Add in the milk in two or three batches. Once you have a homogeneous mix add in the dry ingredients and whisk until combined. Because you are using gluten-free flour you will not obtain chewy pancakes even if you mix them for a longer time than you would if you were preparing them with wheat flour.
Oil a pan slightly and turn on the stove on medium-high heat. Scoop roughly 3 tablespoons of the pancake mixture onto the pan and let it cook for a couple of minutes. Flip the pancake when you see bubbles rising on the surface and bursting, and cook for another two minutes. Repeat until you finish all the batter.
If you want to keep the pancakes warm as you prepare them, you can turn on the oven at 100°C and turn it off when it reaches the temperature. You can then keep your pancakes in the oven until you are ready to eat them :)
Once the pancakes are ready, stack them, pour maple syrup and top with the mascarpone cream.

PANCAKES AL BURRO DI ARACHIDI CON TOPPING AL MASCARPONE E SCIROPPO D'ACERO

Ciao a tutti e bentornati sul mio blog! La ricetta che vi propongo oggi è stata realizzata per il contest "Sei in cucina", il cui tema per il mese di novembre è il comfort food. Appena visti gli ingredienti del mese ho pensato a questi pancakes, facili da realizzare e che vi lasceranno assolutamente soddisfatti! Io li immagino come una coccola, da gustare caldi la domenica mattina, quando abbiamo un po' più di tempo per preparare e goderci una bella colazione, magari anche insieme ai nostri famigliari. L'ideale sarebbe svegliarsi e trovarli già pronti belli e fumanti, ma non si può avere tutto! ;)
La ricetta è ispirata a dei pancakes che avevo già pubblicato su questo sito, ma modificata sulla base di vari esperimenti che ho realizzato, e con l'aggiunta del burro di arachidi nell'impasto. Ecco le dosi:

Per i pancakes
1 cup di farina senza glutine per torte*
due cucchiai di zucchero
due cucchiaini di lievito per dolci
1 cup di latte di riso aromatizzato al cocco**
due cucchiai di burro di arachidi
1 uovo

Per il topping
100 g di mascarpone
sciroppo d'acero

*Ho riscontrato che l'utilizzo di farine senza glutine produce dei pancakes molto più soffici e leggeri. Io ho usato un mix di farine senza glutine per torte, che non è nient'altro che un mix di amido di mais e fecola di patate che può tranquillamente essere riprodotto in casa.
**La ricetta originale prevede farina di grano tenero e latte vaccino. Ho sostituito il latte di riso al cocco perché mi piace il retrogusto che lascia. In realtà in questa versione il cocco si percepisce a malapena per via della presenza del burro di arachidi. In ogni caso a parer mio rende i pancakes più soffici e leggeri.

Per prima cosa mescolate il mascarpone e 2 cucchiai di sciroppo d'acero con delle fruste o con una forchetta. La crema risultante sarà il topping per i vostri pancakes. Mettete da parte.
Setacciate insieme la farina e il lievito per dolci, e unite le allo zucchero. Mescolate bene. In una ciotola a parte ammorbidite il burro di arachidi con le fruste, quindi unite l'uovo. Solo quando si saranno amalgamati per bene, aggiungete il latte poco a poco. Unite gli ingredienti secchi a quelli liquidi e mescolate. Se deciderete di utilizzare farina di grano tenero fate attenzione a non mischiare troppo il composto, pena dei pancakes gommosi. Questo problema non dovrebbe presentarsi se utilizzate farine senza glutine, proprio per l'assenza del glutine stesso.
Ungete una padella con poco olio e quando sarà calda versate un po' del composto aiutandovi con un mestolo da cucina. Cuocete finché non vedrete apparire delle bollicine, e queste non inizieranno a scoppiare. A quel punto girate i pancakes e cuocete per altri due minuti. Ripetete l'operazione fino a finire l'impasto, ungendo la padella di tanto in tanto se necessario. Se volete essere sicuri che i vostri pancakes restino caldi accendete il forno a 100°, e spegnetelo quando avrà raggiunto la temperatura. Man mano che i vostri pancakes saranno pronti potrete tenerli in caldo nel forno.
Una volta pronti impilateli, irrorateli con altro sciroppo d'acero e aggiungete la crema al mascarpone.

Chocolate chip banana bread


Hello everyone! I am back with another sweet recipe, really easy and quick to prepare, and ideal if you have overripe bananas sitting on your kitchen counter… Yeah, that's right, banana bread! I tasted it for the first time during my holidays in Maui: during a road trip around the island I stumbled upon a small food truck on the side of the road where they were selling all kinds of banana breads. I tried the chocolate chips and macadamia nuts one and it was really delicious! I have been meaning to try to prepare my own since then and I finally had the chance. I got the basic recipe from the website "The Kitchn" and slightly modified it according to the content of my pantry :)
Unfortunately I did not have macadamia nuts at home, so I went for chocolate chips only. If you want you can substitute the macadamia nuts with any other nuts, or you can leave nuts and chocolate out and have a "pure" banana bread. Here is the list of ingredients I used:

2 cups flour
1/3 cup oil (I used peanut oil but any other neutral flavored oil will do)
1 cup sugar
two eggs
two ripe bananas, mashed with a fork*
1/4 cup milk
seeds from one vanilla pod
1 teaspoon baking powder
chocolate chips to taste (optional)

*the recipe calls for 3, but I had just 2 at home, and it turned out to be totally fine.

Preheat the oven to 180°. Grease a 25 cm long loaf pan and line it with parchment paper, leaving some hanging from the sides. The flaps will help you remove the banana bread once it is baked. Combine oil and sugar, then add the eggs and mix them in. Whisk in the milk, the vanilla seeds, and the mashed bananas. Mix together flour and baking powder and add them to the wet ingredients, folding them in until barely combined. Finally, if you decide to use them, add in the chocolate chips. Pour the batter into the loaf pan and bake for 60 minutes. After that check with a toothpick if the banana bread is ready in intervals of 5 to 10 minutes. It the loaf is still uncooked but the top is starting to brown you can cover it with a sheet of aluminum foil. In my case it took about 80 minutes to completely bake.
What can I say...we really loved the recipe! I highly recommend adding the chocolate chips, because the combination with the banana flavor is just wonderful. Of course there is an infinite number of variations you can experiment with, like adding nuts or cinnamon or even changing the type of flour. I am already planning to try different versions and I will definitely update you with the results :)

BANANA BREAD CON GOCCE DI CIOCCOLATO

Ciao a tutti! Eccomi tornata con un'altra ricetta dolce, davvero facile e veloce da preparare, e ideale per smaltire delle banane che sono diventate un po' troppo mature. Questa preparazione è molto popolare negli Stati Uniti e prende il nome di banana bread. Io l'ho assaggiata per la prima volta durante le mie vacanze a Maui. Durante un road trip dell'isola ci siamo imbattuti in un chioschetto in cui vendevano banana bread di tutti i tipi. Io ho assaggiato la versione con noci macadamia e gocce di cioccolato... Meravigliosa! Era da tanto perciò che desideravo testare una ricetta per prepararlo in casa, e finalmente ne ho avuto l'occasione. L'ispirazione arriva dal sito "The Kitchn", la cui ricetta ho modificato in base a quello che avevo a disposizione nella mia dispensa.
Purtroppo non avevo le noci macadamia a casa, perciò ho optato per una versione con solo gocce di cioccolato. Chiaramente voi potete anche decidere di omettere le gocce di cioccolato e preparare un banana bread "in purezza" :D
Ecco la lista di ingredienti che ho utilizzato:

2 cup di farina
1/3 cup (85 ml) olio di arachidi (o un altro olio dal sapore neutro)
1 cup zucchero
due uova
due banane molto mature, schiacciate con una forchetta
i semi di una bacca di vaniglia
un cucchiaino di lievito per dolci
gocce di cioccolato a piacere

Accendete il forno a 180°. Ungete uno stampo da plum-cake lungo circa 25 cm e foderatelo con della carta da forno, lasciando che un po' esca dai bordi dello stampo. Questo faciliterà l'estrazione del banana bread una volta cotto.
Unite dapprima l'olio e lo zucchero, quindi le uova, mescolando fino ad ottenere un composto omogeneo. Aggiungete il latte, i semi di vaniglia e le banane schiacciate. Setacciate insieme farina e lievito per dolci e uniteli al composto. Mescolate gentilmente e brevemente, giusto il tempo necessario affinché gli ingredienti secchi vengano assorbiti, un po' come si fa per i muffin. A questo punto unite se volete le gocce di cioccolato. Versate il composto nello stampo da muffin e infornate. Cuocete per circa 60 minuti e a quel punto effettuate la prova stecchino ad intervalli di 5-10 minuti.
Che dire... La ricetta ci è piaciuta tantissimo! Consiglio vivamente di aggiungere le gocce di cioccolato, perché la combinazione con il sapore delle banane è veramente fantastica. Ovviamente c'è un numero infinito di varianti con le quali potrete sperimentare, come ad esempio l'aggiunta di noci o di cannella, o l'impiego di farine diverse. Io senza dubbio proverò altre versioni, e vi informerò sui risultati :)

Pumpkin, Sausage and Camembert Flammkuchen



Hello everyone! Here I am again with a dish I prepared for a Facebook contest (yeah another one! :P). The rules of the contest are as follows: every month the organizers propose  a list consisting of one main and a few secondary ingredients. The participants have to come up with one recipe which has to contain the main ingredient and at least two of the secondary ones. I really love the format of this contest, it reminds me a little of the Master Chef Mystery Box Challenge  :) At the very end of this post you can find this month's banner and the link to the Facebook group.
So here I am, with my recipe for the month of October: a Flammkuchen with butternut squash, sausage and Camembert. Flammkuchen is a typical dish here in Germany, especially in Alsace and in the south of the country. It consists of a leavened dough which is rolled to a very thin base and topped with crème fraîche, bacon and onion. I really love it and I cannot resist a piping hot Flammkuchen during the yearly Christmas markets in the town I live in!
I got the recipe for the dough from a German cooking magazine, Essen und Trinken mit Thermomix (it yields 4 Flammkuchen)

For the dough
375 g flour
250 g buttermilk
15 g fresh yeast*
2 1/2 tablespoons olive oil
1 1/2 teaspoon salt*
a pinch of sugar

For the topping
200 g of butternut squash, thinly sliced
70 g Camembert, diced
2 sausages, about 200 g, diced
200 g red onion, thinly sliced
200 g crème fraîche
1/2 teaspoon of salt
black pepper
nutmeg

*Notes: I reduced the amount of yeast to 8 g and increased the proofing time in order to get a more digestible dough. I also reduced the amount of salt. I find that food in Germany tends to be a bit on the salty side for me, so I preferred to play it safe :-)

Prepare the dough: dissolve the yeast in the buttermilk and add a pinch of sugar. In a big bowl put flour, oil, salt and the buttermilk-yeast mixture and knead until you get a smooth and dry dough. Cover with foil and let proof for one hour (I let the dough proof for about 40 minutes outside the fridge and then two more hours in the fridge). In the meantime season the crème fraîche with half a teaspoon of salt, pepper, and nutmeg to taste. Preheat the oven at 250° with the baking tray already inserted, or with your baking stone if you have one. When the proofing time is up divide the dough into four equal parts and for each one proceed as follows: roll the dough down to a very thin layer and transfer it to a sheet of parchment paper. Spread with crème fraîche and top with butternut squash, onion, sausage and  Camembert. Transfer to the baking tray with the help of the parchment paper and bake for about 8 minutes, or until golden brown and crunchy.
What can I say, a flavor mix that I had never tried before but that I really enjoyed! Butternut squash and Camembert is a great combination, and the sausage contributes to the strength and the character of the dish… A real treat!

FLAMMKUCHEN ALLA ZUCCA, SALSICCIA E CAMEMBERT

Ciao a tutti! Eccomi di nuovo tra voi con un piatto ideato  in occasione di un contest su Facebook (sì, un altro! :P). Il nome del concorso è "Sei in cucina - la sfida degli ingredienti": ogni mese i partecipanti devono presentare una ricetta realizzata con una serie di ingredienti proposti dagli organizzatori. Uno di questi è l'ingrediente principale, che deve essere il protagonista della ricetta. Oltre a questo i partecipanti devono scegliere almeno altri due tra gli ingredienti in lista. L'idea mi è subito piaciuta e mi ha ricordato un po' la Mistery Box di MasterChef :) Perciò eccomi qui con la mia proposta per il mese di ottobre, una Flammkuchen alla zucca, salsiccia e Camembert. La Flammkuchen è una preparazione tipica della Germania, in particolare dell'Alsazia e del sud del Paese. Consiste in un impasto lievitato steso molto sottile e tipicamente condito con crème fraîche, pancetta e cipolle. Io la adoro e non c'è Natale in cui non visito i mercatini nella città in cui vivo per gustarmi una bella Flammkuchen appena uscita dal forno a legna!
La ricetta per l'impasto è tratta  da una rivista di cucina tedesca, Essen und Trinken mit  Thermomix (le dosi sono per 4 persone).

Per l'impasto:
375 g di farina
250 g di latticello
15 g di lievito di birra*
2 cucchiai e mezzo di olio d'oliva
un cucchiaino e mezzo di sale*
un pizzico di zucchero

Per la copertura:
200 g di zucca a fettine sottili
70 g di Camembert a dadini
2 salsicce a pezzi, circa 200 g
200 g di cipolla rossa a fettine sottili
200 g di crème fraîche
1/2 cucchiaino di sale
pepe nero
noce moscata

*Note: rispetto alla ricetta originale ho dimezzato le dosi di lievito di birra e allungato i tempi di lievitazione per aumentare la digeribilità dell'impasto. Inoltre ho ridotto a un cucchiaino raso la quantità di sale, perché qui in Germania tendono a salare tutto parecchio, almeno per i miei gusti, e ho preferito restare sul sicuro :)

Preparate l'impasto: sciogliete il lievito di birra nel latticello e aggiungete un pizzico di zucchero. In una ciotola capiente o nella planetaria inserite la farina, l'olio, il latticello e il sale, e impastate fino ad ottenere un impasto liscio e asciutto. Coprite con della pellicola e lasciate lievitare un'ora (io ho lasciato lievitare una quarantina di minuti fuori dal frigo e altre due ore in frigo). Nel frattempo condite la crème fraîche con sale, pepe e noce moscata. Preriscaldate il forno a 250° con la teglia già inserita, o con la pietra refrattaria se la possedete. Trascorso il tempo di lievitazione dividete l'impasto in quattro parti. Con l'aiuto di un mattarello stendete ciascuna parte in un rettangolo sottile e trasferitelo su un foglio di carta da forno. Cospargete di crème fraîche e condite con la zucca, la salsiccia, la cipolla rossa e il Camembert. Cuocete ciascuna Flammkuchen, trasferendola nella teglia calda con l'aiuto della carta da forno, per circa 8 minuti o finché non sarà diventata croccante e scura ai bordi.
Che dire, un mix di sapori che non avevo mai provato in precedenza ma che ho davvero apprezzato! Zucca e Camembert vanno insieme che è una meraviglia, e la salsiccia conferisce forza al sapore del piatto... Che bontà!

Chocolate and Hazelnut Babka




Hello everyone! I am FINALLY back on the blog after waaaay too long. I am really excited to be sharing another recipe with you and I really hope that from now on I will be able to post a little bit more consistently. Before diving into today's recipe, though, I would like to give you an update on what's been going on in these long months of absence from the blog. Unfortunately the issues I mentioned in this post have not been yet resolved, although things seem to be a bit better now, so there is hope! :) In the meantime I finished my studies by completing my PhD in astrophysics - yay! And, more importantly...I got married! We had awesome days with our friends and families and I couldn't be happier!
Anyways...enough with my personal life and let's get started with the recipe!
Once again (like here and here, for example) the inspiration came from a very fun contest, namely Re-Cake 2.0. For those of you who don't know it, each month a new recipe is selected and bloggers and food lovers are invited to cook their own version. Some ingredients are fixed, while some can be varied, so that the participants are allowed to introduce small changes based on their taste and creativity.
This month's choice is a sweet bread, popular in Eastern European and Jewish cuisine, called Babka, which stands for grandma. The actual recipe is the one proposed by Yotam Ottolenghi in his marvelous cookbook "Jerusalem", and, needless to say, it is GREAT. The extra crunch added by the nuts perfectly complements the bread's texture, and the rich chocolatey filling makes this recipe just perfect for this time of the year, when the cold weather is approaching and comfort food is all we crave :)
If I convinced you that that recipe is is worth a try, here are the ingredients you will need:

For the bread:

530 g flour
150 g butter
100 g sugar
12 g yeast
1 lemon
120 g water

For the filling:

130 g dark chocolate
120 g butter, room temperature
100 g hazelnuts, roughly chopped
50 g powdered sugar
30 g cocoa powder

For the glaze:

40 g honey
4 tablespoons water
1 teaspoon cinnamon powder
1 teaspoon vanilla extract

Note: I only used half of the quantities, and they were enough to fill a 25 cm loaf pan. As for the yeast, I only used 4 g  and let the dough proof in the fridge overnight.

Dissolve the yeast in 60 g of lukewarm water. In a mixing bowl add the flour, sugar, the water-yeast mixture and the zest of one lemon. Add the eggs, the butter and the rest of the water in the center of the bowl and knead everything together for about 10 minutes, until you end up with an elastic but still sticky dough. Cover with plastic foil and let it proof at room temperature for one hour and a half, and then for two more hours in the fridge (if you choose to do as I did, reduce the amount of yeast and keep the dough in the fridge overnight).
To prepare the filling melt chocolate and butter together, stir in the cocoa powder and the powdered sugar, and let the mixture cool down.
When the dough has risen take it out of the fridge and divide it in two parts (since I used only half of the ingredients I skipped this step). Roll each of them down to a rectangle of roughly 30 x 40 cm. Spread the chocolate filling, sprinkle with nuts and roll into a cylinder. Cut each roll into half lengthwise and form two braids. Transfer the braids into two 25 cm loaf pans lined with parchment paper and leave them to rise again for one hour.
Cook for 30 to 40 minutes in the oven, preheated to 190°C (or until a toothpick inserted will come out dry and clean).
And here it is, my chocolate and hazelnut Babka!

BABKA ALLE NOCCIOLE E CIOCCOLATO



Ciao a tutti! Sono finalmente tornata sul blog dopo veramente troooooppo tempo. Sono davvero entusiasta di poter condividere un'altra ricetta con voi, e spero vivamente che da ora in poi riuscirò a pubblicare post con maggiore costanza. Prima di passare alla ricetta di oggi, però, vorrei aggiornarvi un po' sulle cose che sono successe in questi lunghi mesi di assenza dal blog. Purtroppo i problemi di cui vi avevo parlato tempo fa non sono ancora stati risolti, anche se ci sono stati dei piccoli miglioramenti, perciò c'è speranza! :) Nel frattempo ho terminato gli studi e conseguito il dottorato in astrofisica...urrà! Ma, cosa più importante... Mi sono sposata! Abbiamo trascorso delle giornate fantastiche con le nostre famiglie e i nostri amici, e non potrei essere più felice!
Comunque, bando alle ciance, e iniziamo a parlare della ricetta! Ancora una volta (come per esempio qui e qui) l'ispirazione è venuta da un contest molto divertente: Re-Cake 2.0. Per chi non lo conoscesse, ogni mese viene proposta una nuova ricetta e food blogger e appassionati di cucina sono invitati a preparare la loro versione. Piccole varianti sono permesse per dare modo ai partecipanti di personalizzare la ricetta.
La Re-Cake 2.0 del mese è un dolce lievitato tipico della cucina est-europea ed ebraica chiamato Babka, che significa nonna. La versione è quella di Yotam Ottolenghi presente nel suo meraviglioso libro di cucina "Jerusalem", e inutile a dirsi è buonissima! La croccantezza delle nocciole bilancia perfettamente la consistenza dell'impasto, e il ripieno cioccolatoso rende la ricetta semplicemente perfetta per questo periodo dell'anno, quando l'inverno si avvicina e del buon comfort food è tutto ciò che desideriamo :)
Se sono riuscita a convincervi che vale la pena provarla, ecco la lista degli ingredienti.

Per l'impasto:

530 g di farina
150 g di burro a temperatura ambiente
100 g di zucchero
12 g di lievito di birra
1 limone
acqua 120 g

Per il ripieno:

130 g di cioccolato fondente
120 g di burro
100 g di nocciole, tritate grossolanamente
50 g di zucchero a velo
30 g di cacao in polvere

Per la glassa:

40 g di miele
4 cucchiai di acqua
1 cucchiaino di cannella in polvere
estratto di vaniglia 1 cucchiaino

Io ho preparato solo metà dose, e la quantità è perfetta per uno stampo da plum-cake lungo 25 cm. Per quanto riguarda il lievito, ne ho utilizzato solo 4 g e ho lasciato riposare l'impasto in frigo per tutta la notte.

In una ciotola unite la farina, lo zucchero, la scorza grattugiata di un limone e il lievito precedentemente sciolto in 60 g di acqua tiepida. Aggiungete le uova, il burro a temperatura ambiente e il resto dell'acqua al centro della ciotola impastate tutto per circa 10 minuti. L'impasto risultante sarà elastico ma ancora leggermente appiccicoso. Coprite con della pellicola trasparente e lasciate a lievitare a temperatura ambiente per un'ora e mezza, e poi in frigo per altre due ore (o se scegliete di fare come me, riducete la quantità di lievito e lasciate riposare in frigo per tutta la notte).
Per preparare il ripieno sciogliete burro e cioccolato a bagnomaria, quindi unite il cacao in polvere e lo zucchero a velo e mescolate fino ad amalgamare il tutto. Lasciate raffreddare il composto.
Trascorso il tempo di lievitazione prendete l'impasto e dividetelo in due parti (se scegliete di fare metà dose saltate questo passaggio). Stendete ciascuna delle parti in un rettangolo di circa 30 × 40 cm e cospargetela con il ripieno al cioccolato e le nocciole tritate. Arrotolate ciascun rettangolo fino a formare un cilindro che dividete a metà tagliandolo nel verso della lunghezza e intrecciate le due metà. Trasferite ciascuna treccia in uno stampo da plum-cake foderato con carta da forno e lasciate lievitare per un'altra ora. Cuocete in forno preriscaldato a 190° per circa 30-40 minuti. Controllate lo stato di cottura effettuando la prova stecchino.

Winter citrus upside down cake - torta speziata agli agrumi


Eccomi qui, come al solito in extremis, con il post riguardante la re-cake di marzo: soffice, umida, e profumatissima, l'abbiamo spazzolata in un lampo! Proprio a causa del profumo irresistibile ho dovuto scattare le foto in fretta e furia, e in scarse condizioni di luce, non potevamo aspettare il giorno successivo prima dell'assaggio!
Accanto agli aromi di agrumi e cannella, questa ricetta prevede il cardamomo, che essendo una spezia molto usata in India, ho avuto la possibilita' di riportare in abbondanza dal mio ultimo viaggio. Durante la nostra permanenza in Kerala, infatti, abbiamo visitato una piantagione, dove, tra le altre cose, veniva coltivato anche il cardamomo.
Spero di riuscire a raccontarvi presto di quel viaggio meraviglioso, ma per ora vi lascio qualche foto della spezia in questione :D

In tutta onesta' non amo troppo il sapore del cardamomo, che tende a dominare in alcuni dolci tipici della cucina Indiana, ma ero curiosissima dell'abbinamento con gli agrumi. Beh...non mi ha deluso nemmeno un po'! Anzi, non avendo esagerato con le quantita' ho scoperto che si abbina in maniera meravigliosa con i sapori di questa ricetta, che stupira' anche i diffidenti come me! :)
Ecco, gli ingredienti, presi dal blog di Ileana, e riadattati per uno stampo da 20 cm:

27 gr burro
59 gr zucchero di canna
9 gr miele
6 gr succo di limone
fettine di arancia

177 gr farina
0.6 busta lievito per dolci
1/3 cucchiaino cannella in polvere
1/3 cucchiaino di semi di cardamomo in polvere
1/3 cucchiaino sale
2 uova grandi
160 gr zucchero semolato
64 gr olio oxtravergine d'oliva
35 gr succo arance rosse
35 gr succo arance
27 gr latte
Semi 1/2 bacca di vaniglia
3 gr scorza di arance rosse

Accendete il forno a 190 gradi e foderate il fondo di una teglia con carta da forno. Ricavate delle fettine sottili da un'arancia o da un agrume a scelta.
Preparate il caramello: in un pentolino sciogliete il burro con lo zucchero di canna, il miele e il succo di limone. Quando lo zucchero si sara' sciolto versate il caramello nella tortiera e disponete le fettine di agrume, coprendo tutto il fondo.
In una ciotola sbattete le uova con lo zucchero, quindi unite l'olio e mescolate fino ad ottenere un composto omogeneo. A questo punto versate il succo d'arancia, il latte e la vaniglia e amalgamate.
In un recipiente a parte mescolate la farina al lievito per dolci, la cannella, il cardamomo, il sale, e la scorza di arancia.
Unite poco a poco gli ingredienti secchi a quelli liquidi, e mescolate fino ad amalgamare il tutto.
Versate l'impasto cosi' ottenuto nella teglia e infornate. Cuocete per 40 minuti, facendo sempre la prova stecchino.
Lasciate raffreddare e...buon appetito! :)

An apple, hazelnut and oat cake



Hello, hello!
I promised I would come back soon with another apple-and-cinnamon-based recipe, so, here I am!
I prepared this cake for the new edition of Re-Cake, Re-Cake 2.0, which started this month with a gorgeous recipe! It is is super easy to make and will definitely not disappoint you. This is the blog I took the recipe from.
You will need:

150 grams of rice flour (I used wheat flour) 
50 grams of hazelnut flour 
60 grams of oat flour (you can make it yourself simply grinding oats)
1 tablespoon of cream of tartar or a bag of baking powder 
1/2 teaspoon of baking soda (needed only if you do not use the baking powder) 
1/2 tablespoon of cinnamon powder 
1/2 tablespoon of ginger 
1/2 teaspoon of salt 
150 grams of brown sugar 
125 ml of buttermilk*
125 ml of olive oil (I used peanut oil because it has a more delicate taste)
1 tablespoon of vanilla extract 
3 medium sized eggs
3 medium apples, thinly sliced 
50 grams of hazelnuts, roughly diced 
2 tablespoons of oat bran plus 2 for the topping

*if you want to make your own, you can follow the directions I described here, making sure you use half the quantities

Preheat the oven at 180 degrees. Grease a baking tin and line it with parchment paper. 
In a bowl mix together rice flour, hazelnut flour, oat flour, oat bran, cinnamon, ginger, salt and baking powder (or cream of tartar and baking soda). In a separate bowl whisk the eggs together with sugar, vanilla extract, buttermilk and oil. Pour the liquid mixture onto the dry ingredients, mix together until well combined, and pour the batter in the baking tin. Decorate with apples, hazelnuts and oat bran. Bake about 1 hour or until a toothpick inserted in the cake comes out clean.
In my case the apples sank in the dough while I was baking the pie, so 15-20 minutes after I started baking I added a few extra apple slices on top and placed the tin back in the oven.

TORTA ALLE MELE, NOCCIOLE E AVENA




Buongiorno, buongiorno! Vi avevo promesso che sarei tornata presto con una nuova ricettina a base di mele e cannella, e quindi eccomi qua! Il pretesto è la nuova versione del Re-cake, Re-cake 2.0, che questo mese ha esordito con una torta meravigliosa e davvero semplice da realizzare! Qui il link al post da cui ho preso la ricetta.
Vi serviranno: 

150 gr di farina di riso (io normale farina per dolci)
50 gr di farina di nocciole 
60 gr di farina d'avena (ottenuta macinando fiocchi d'avena) 
1 cucchiaio di cremor tartaro o una bustina di lievito per dolci 
1/2 cucchiaino di bicarbonato (da omettere se utilizzate il lievito)
1/2 cucchiaio di cannella in polvere 
1/2 cucchiaio di zenzero in polvere
1/2 di sale 
150 gr di zucchero di canna 
125 ml latticello*
125 ml di olio di oliva (io ho usato olio di semi di arachide)
1 cucchiaio di estratto di vaniglia 
3 uova medie 
3 mele di misura media, tagliate a fettine sottili
50 grammi di nocciole tritate 
2 cucchiai di crusca di avena più 2 per il topping 

*Se volete preparare il latticello in casa, usate le istruzioni che trovate qui, usando metà dose.

Preriscaldate il forno a 180°, imburrate una teglia da plumcake e ricoprite con carta da forno. In una ciotola amalgamate la farina di riso, la farina di nocciole, quella di avena, la crusca, lievito (o cremor tartaro e bicarbonato), cannella, zenzero e sale.  A parte sbattete le uova con lo zucchero, l'estratto di vaniglia, il latticello e l'olio. Unite gli ingredienti liquidi a quelli secchi e  mescolate. Versate il composto così ottenuto nella teglia. Decorate con le mele tagliate a fettine sottili e cospargete con le nocciole tritate e la crusca di avena. 

Cuocete per un'ora circa, testando il grado di cottura con uno stuzzicadenti. 
Nel mio caso le mele sono affondate in forno, perciò dopo una circa 15-20 minuti dall'inizio della cottura ho estratto la teglia e aggiunto qualche altra fettina in superficie.

Apple cinnamon muffins with orange zest


Hello everyone! 
I finally managed to find some time between work, my German course, the gym and life in general to prepare something nice and share it with you! I am still trying to organize things after coming back from a long and exciting trip to India! It was a great experience and I hope I will be able to put together some pictures to show you the beautiful places we visited!
Actually it is already time to pack again: next week I will leave for the Lofoten Islands, in Norway, hoping to see the northern lights...Wish me good luck!
But now let's focus on this recipe: it is quick, it is easy, it is by Martha Stewart...do I need to say anything else? The only change I made was to add some dry orange zest I prepared with fruit from my parent's tree. We simply loved it!
You will need

2 cups (256 g) flour
1 cup (200 g) of sugar
2 teaspoons baking soda
1/2 teaspoon of cinnamon (I put more -  there is never too much cinnamon)
1 apple, diced
 2 eggs
1 cup (250 ml) of buttermilk
1/2 cup (113 g) of melted butter

If  you want to prepare the buttermilk at home you will also need
125 gr of yogurt
125 gr milk
1 teaspoon of lemon juice

Preheat the oven at 200 degrees and start preparing the buttermilk by mixing yogurt, milk and lemon juice, and letting the mixture sit for 15 to 20 minutes.
In a large bowl mix together flour, cinnamon, orange zest, baking soda, and sugar. Toss in the diced apple and coat them in flour.  In a separate bowl whisk together eggs, buttermilk and butter and gently pour the liquid mixture on the dry ingredients. Fold gently without overmixing. Distribute the batter in muffin moulds and bake 16 to 18 minutes.
A classic combination between apple and cinnamon, with a special texture due to the use of buttermilk, these muffins are a must-do!

MUFFINS ALLE MELE, CANNELLA E SCORZA DI ARANCIA


Ciao a tutti! 
Sono finalmente riuscita a trovare un po' di tempo tra lavoro, corso di tedesco,  palestra e la vita in generale per preparare qualcosa di sfizioso da poter condividere con voi!
Sono ancora in fase di organizzazione dopo un lunga e bellsima vacanza in India! 
A dirla tutta è già ora di preparare di nuovo le valigie perché tra meno di una settimana partirò per le Lofoten Islands con la speranza di vedere l'aurora boreale...incrociate le dita per me!
Ma veniamo all ricetta: facile, gustosa, e di Martha Stewart...devo aggiungere altro?! ;)
L'unica modifica che ho apportato è stata l'aggiunta scorza di arancia essiccata che ho preparato con le arance dell'albero dei miei genitori. Il risultato è stato apprezzato non solo da me!
Veniamo agli ingredienti. Vi serviranno 

2 cups (256 g) di farina 
1 cup (200 g) di zucchero 
2 cucchiaini di bicarbonato (io ho usato lievito per dolci)
250 ml di latticello 
2 uova
1 mela tagliata a cubetti 
1/2 cucchiaino cannella in polvere (io ho abbondato) 
1/2 cup (113 g) di burro fuso

Se decidete di preparare il latticello in casa vi occorreranno anche 

125 grammi yogurt 
125 grammi di latte 
1 cucchiaino di succo di limone 

Accendere il forno a 200 gradi e preparare il latticello: versare poco a poco il latte allo yogurt in modo da non formare grumi e versare il succo di limone. Lasciar riposare per circa 15-20 minuti. 
In una ciotola capiente unire farina, zucchero, cannella, lievito per dolci e scorza di arancia. Aggiungere la mela tagliata a dadini. In un recipiente a parte versate uova, burro fuso e latticello. 
Unire gli ingredienti liquidi a quelli secchi e amalgamare senza però mescolare troppo.  Versare l'impasto negli appositi pirottini e infornare in forno già caldo a 200 gradi per 16-18 minuti. 
Una preparazione semplice e classica, ma non per questo banale: il latticello conferisce quella sofficezza che rende questi muffin davvero imperdibili!

Chocolate brushed lebkuchen with raspberry jam



Ciao a tutti! Eccomi tornata con un nuovo post, sono davvero contenta di essere riuscita a pubblicare di nuovo in così poco tempo! :) Ancora una volta il post sàrà solo in italiano, spero davvero di poter aggiungere le traduzioni al più presto.
Per prima cosa vorrei ringraziare anche qui Alessandra del blog La cucina di zia Ale, Fabiana del blog Non solo pasticci e Stefania del blog (ora sito) Arabafelice in cucina per aver organizzato il contest "Profumo di Natale", che la mia casetta di pan di zenzero ha vinto come ricetta più natalizia! Urrà! ^_^ Ancora grazie di cuore!
Sono davvero felice e anche devo ammettere emozionata per questo risultato arrivato dopo un anno in cui purtroppo ho potuto dedicarmi molto poco ai miei hobby. E' stato un ritorno davvero alla grande!
Galvanizzata dalla bella notizia, mi sono tuffata subito nella produzione di queste Lebkuchen, dolcetti natalizi della tradizione tedesca, forse tra i miei dolci preferiti qui in Germania.
Lo spunto è stato quello del re-cake, una manifestazione a cui ho partecipato con l'ultimo post prima della lunga pausa lontana dal blog. Ispirandomi ad una versione con la marmellata di albicocche che ho assaggiato un paio di settimane fa e che mi è molto piaciuta, ho deciso di apportare una piccola variante aggiungendo della marmellata di lamponi all'interno delle Lebkuchen. Il risultato è stato davvero ottimo. L'asprigno dei lamponi smorza un po' il dolce di questi biscotti, e il sapore si sposa perfettamente coi profumi del mix di spezie, che trovo favoloso!
Praticamente questo weekend non ho mangiato altro! :D :D :D




Veniamo alla ricetta. Per preparare le Lebkuchen vi serviranno:

200 g di marzapane
200 g di zucchero (io 50 semolato e 150 di cassonade blonde*)
50 g di scorzette di limone candite**
50 g di mandorle macinate
50 g di nocciole macinate
4 albumi
100 g di farina
2 cucchiaini di mix per Lebkuchen**
1/2 cucchiaino di sale
2 fogli di ostia (Io ho usato dei dischi di ostia del diametro di 7 cm - ingorda! :D)
100 g di cioccolato fondente
100 g di cioccolato bianco

A piacere: marmellata di lamponi

Per il mix di spezie per  Lebkuchen
2 cucchiaini di cannella macinata
2 cucchiaini di chiodi di garofano macinati
1/2 cucchiaino di pepe nero
1/4 di cucchiaino di noce moscata
1/2 cucchiaino di coriandolo
1/2 cucchiaino di cardamomo macinato
1/2 cucchiaino di semi di anice macinati
1/2 cucchiaino di zenzero macinato

*la cassonade blonde è uno zucchero grezzo di canna, simile al light brown sugar, dal sapore particolare, che ricorda molto quello del muscovado. L'ho comprata a Bruxelles lo scorso mese, qui è praticamente introvabile. 
**Io ho utilizzato un mix di spezie per Lebkuchen già pronto, che si trova al supermercato, e che già contiene scorze di arancia e limone.

In una ciotola, o nella vasca della planetaria, sciogliete il marzapane con i 4 albumi, il sale e lo zucchero. Mescolate fino ad ottenere un composto omogeneo. In un recipiente a parte unite la farina setacciata al mix di spezie, il bicarbonato, la farina di mandorle e di nocciole. Unite al composto di uova e mescolate fino ad ottenere un impasto che sarà piuttosto morbido. 
Disponete le ostie su una teglia coperta da carta da forno e, con l'aiuto di una sac-à-poche, distribuite l'impasto sulle cialde stesse, lasciando un po' di margine perché i biscotti cresceranno in cottura.
I primi biscotti li ho fatti senza ripieno per testarne la riuscita. Quando mi sono resa conto che le Lebkuchen risultavano un po' bassine ho deciso di mettere l'impasto (già dentro la sac-à-poche) a riposare in freezer, in modo da avere una consistenza più sostenuta. In questo modo per le successive lebkuchen sono riuscita ad aggiungere la marmellata di lamponi e un ulteriore strato di impasto, ottenendo dei dolcetti ripieni.
Cuocetei n forno già caldo a 180 gradi per circa 15-20 minuti. Lasciate raffreddare. 
Per la copertura ho deciso di temperare il cioccolato, in modo da ottenere (speravo -.-') una superficie più lucida. Inoltre avevo già in mente di utilizzare il cioccolato avanzato per preparare dei cioccolatini da usare come decorazione per le fotografie, quindi ho pensato fosse il modo migliore di procedere. Potete anche seguire le indicazioni orginali della ricetta, e sciogliere il cioccolato a bagnomaria.
La procedura che ho utilizzato per temperare il cioccolato è quella cosiddetta per inseminazione: si mette da parte un terzo del quantitativo di cioccolato che si vuole utilizzare (in questo caso 30 grammi), e si fonde il rimanente (Io ho usato il microonde alla massima potenza) ad un temperatura che dipende dal tipo di cioccolato. Per la cioccolata fondente questa corrisponde a 51 gradi, per quella bianca e quella latte 45 gradi. A questo punto si unisce il cioccolato messo da parte a quello fuso e si mescola energicamente per potare per abbassare la temperatura fino a 30 gradi per il fondente, e 28 per il cioccolato bianco. Come ultimo passaggio si rimette rapidamente la ciotola nel microonde per rialzare le temperature fino a quella di utilizzo, che corrisponde a 31 gradi per il fondente e 30 per il cioccolato bianco e quello al latte.
Il risultato purtroppo non è stato perfetto: delle striature, dovute ad una non corretta cristallizzazione del burro di cacao, erano visibili nei cioccolatini e sulla superficie delle Lebkuchen, segno che qualcosa è andato storto in fase di temperaggio. Era prima volta per me, perciò non demordo! Sicuramente nel tempo migliorerò ;)
In ogni caso questo è un metodo veramente rapido e semplice per temperare il cioccolato senza la necessità di avere a disposizione un tavolo di marmo, che onestamente non saprei dove mettere, e che sarebbe causa di un divorzio ancor prima del matrimonio! :D :D :D
Avendo usato il microonde per fondere il cioccolato, praticamente ho sporcato una sola ciotola. Fenomenale, no? 
A questo punto spennellate di cioccolato la superficie delle Lebkuchen, che nel frattempo si saranno raffreddate, e lasciate solidificare.
Et voilà, sono pronte! Facili, veloci e davvero ottime!!!
L'aggiunta del lampone poi è davvero perfetta, dà quel tocco in più che ho gradito davvero tanto :) Provare per credere! ;)
