Chocolate chip banana bread
Hello everyone! I am back with another sweet recipe, really easy and quick to prepare, and ideal if you have overripe bananas sitting on your kitchen counter… Yeah, that's right, banana bread! I tasted it for the first time during my holidays in Maui: during a road trip around the island I stumbled upon a small food truck on the side of the road where they were selling all kinds of banana breads. I tried the chocolate chips and macadamia nuts one and it was really delicious! I have been meaning to try to prepare my own since then and I finally had the chance. I got the basic recipe from the website "The Kitchn" and slightly modified it according to the content of my pantry :)
Unfortunately I did not have macadamia nuts at home, so I went for chocolate chips only. If you want you can substitute the macadamia nuts with any other nuts, or you can leave nuts and chocolate out and have a "pure" banana bread. Here is the list of ingredients I used:
2 cups flour
1/3 cup oil (I used peanut oil but any other neutral flavored oil will do)
1 cup sugar
two eggs
two ripe bananas, mashed with a fork*
1/4 cup milk
seeds from one vanilla pod
1 teaspoon baking powder
chocolate chips to taste (optional)
*the recipe calls for 3, but I had just 2 at home, and it turned out to be totally fine.
Preheat the oven to 180°. Grease a 25 cm long loaf pan and line it with parchment paper, leaving some hanging from the sides. The flaps will help you remove the banana bread once it is baked. Combine oil and sugar, then add the eggs and mix them in. Whisk in the milk, the vanilla seeds, and the mashed bananas. Mix together flour and baking powder and add them to the wet ingredients, folding them in until barely combined. Finally, if you decide to use them, add in the chocolate chips. Pour the batter into the loaf pan and bake for 60 minutes. After that check with a toothpick if the banana bread is ready in intervals of 5 to 10 minutes. It the loaf is still uncooked but the top is starting to brown you can cover it with a sheet of aluminum foil. In my case it took about 80 minutes to completely bake.
What can I say...we really loved the recipe! I highly recommend adding the chocolate chips, because the combination with the banana flavor is just wonderful. Of course there is an infinite number of variations you can experiment with, like adding nuts or cinnamon or even changing the type of flour. I am already planning to try different versions and I will definitely update you with the results :)
By the way, I just wanted to give you a little heads up that there will be some news relatively soon, so stay tuned! You don't want to miss them! ^_^
BANANA BREAD CON GOCCE DI CIOCCOLATO
Ciao a tutti!

An apple, hazelnut and oat cake
Hello, hello!
I promised I would come back soon with another apple-and-cinnamon-based recipe, so, here I am!
I prepared this cake for the new edition of Re-Cake, Re-Cake 2.0, which started this month with a gorgeous recipe! It is is super easy to make and will definitely not disappoint you. This is the blog I took the recipe from.
You will need:
150 grams of rice flour (I used wheat flour)
50 grams of hazelnut flour
60 grams of oat flour (you can make it yourself simply grinding oats)
1 tablespoon of cream of tartar or a bag of baking powder
1/2 teaspoon of baking soda (needed only if you do not use the baking powder)
1/2 tablespoon of cinnamon powder
1/2 tablespoon of ginger
1/2 teaspoon of salt
150 grams of brown sugar
125 ml of buttermilk*
125 ml of olive oil (I used peanut oil because it has a more delicate taste)
1 tablespoon of vanilla extract
3 medium sized eggs
3 medium apples, thinly sliced
50 grams of hazelnuts, roughly diced
2 tablespoons of oat bran plus 2 for the topping
*if you want to make your own, you can follow the directions I described here, making sure you use half the quantities
Preheat the oven at 180 degrees. Grease a baking tin and line it with parchment paper.
In a bowl mix together rice flour, hazelnut flour, oat flour, oat bran, cinnamon, ginger, salt and baking powder (or cream of tartar and baking soda). In a separate bowl whisk the eggs together with sugar, vanilla extract, buttermilk and oil. Pour the liquid mixture onto the dry ingredients, mix together until well combined, and pour the batter in the baking tin. Decorate with apples, hazelnuts and oat bran. Bake about 1 hour or until a toothpick inserted in the cake comes out clean.
In my case the apples sank in the dough while I was baking the pie, so 15-20 minutes after I started baking I added a few extra apple slices on top and placed the tin back in the oven.
Here it is!
A big thank you to the organizers of Re-cake 2, for having decided to start this new adventure! I am already looking forward to the next recipe!
TORTA ALLE MELE, NOCCIOLE E AVENA
Buongiorno, buongiorno!
125 ml latticello*
125 ml di olio di oliva (io ho usato olio di semi di arachide)
1 cucchiaio di estratto di vaniglia
3 uova medie

Don't tell the shepard...
...in Italy we have this saying, that would translate to "Don't tell the shepard how nice cheese is with pears"...well I discovered a new cheese-frut combination! :P
Apparently this is quite popular in Bulgaria, and I must sayI can see why!
Watermelon and feta cheese, or even grapes and feta (a bit less summery)...fresh and tasty, and the textures combine very well together! Maybe some of you could be a bit dubious, but so were my non italian friends when I mentioned that we have ham and melon! :D So don't be suspicious and try, taste, experiment! :D
Ok, this is not a recipe, more like a tip, let's say...but it's still summer (at least that's what they say, considering the 16 degrees and the giant clouds) and I am in holiday mood :P
I might disappear for a while, maybe will share some of my non-edible creations (wow, sounds pro :P)...I wish you all a nice end of August, and read you soon! ;)

Strawberry syrup and raspberry pancakes!
I made these pancakes on Sunday morning, following a recipe I found on Martha Stewart's website. The introductory comment to the recipe reads: "When you see how simple it is to whip them up from scratch, you'll wonder why you never did it before"...soooo true! I had never had/made pancakes before, and I fell in love with their puffiness! There will not be another Sunday without them! ^_^
The topping is an home-made strawberry syrup and some fresh raspberries. It was gorgeous!
1 cup (150 gr) flour
2 tbsp (30 gr) sugar
2 tsp (7 gr) baking powder
1 cup (250 ml) milk
2 tbsp (30 gr) unsalted butter melted
1 egg
1/2 tsp salt
oil for the pan
Mix together all the dry ingredients: flour, baking powder, sugar and salt.
In a separate bowl whisk the eggs with the milk and the butter, add the dry ingredients and mix in quickly and briefly. If a few lumps stay that's not a problem, you should avoid overmixing the dough.
Warm a non-stick pan and oil it slightly with an oiled paper sheet. Pour 2 or 3 tablespoon of mixture, and cook until bubbles form and start to explode (about 2 minutes).
Flip the pancake and cook for another 2 minutes.
Repeat until the dough is over, oling the pan with the paper towel if necessary
To keep them warm I followed the suggestion given on the website: I warmed up the oven at about 100 degrees, turned it off, and put it the ready made pancakes on a parchment line baking sheet.
As for the topping I had previously prepared some strawberry syrup with the following ingredients:
250 gr fresh strawberries
200 ml water
100 gr sugar
Pour the strawberries with half of the water in a blender with the sugar, and blend until smooth. Sieve the strawberry puree in a saucepan with the remaining water. Boil it up until you get the desired thickness.
I used half of this syrup for a cake I had prepared, and that I will post soon...before preparing the pancakes I boiled the remainig half to make it thicker.
Everything is ready now...Pile up the pancakes, pour the strawberry syrup and decorate with raspberries...Soooo yummy!
We ate all 10 of them the same morning!

Fresh fruit tart
In the past couple of weeks I've been dragged into this whole drawing thing, reading blogs, trying to figure out how to use photoshop-like programs to improve my sketches, looking for new subjects and techniques, etc...but it's time to switch the topic to something you might be more interested in...FOOD! :D
So I will share the recipe of this fruit pie, quite simple but really nice, especially in the summer, when, in my opinion, you can find the best fruits!
For the crust:
500 gr flour
250 gr sugar
250 gr butter
2 whole eggs + 2 yolks
lemon zest
1/2 teaspoon baking powder*
For the custard:**
1/2 lt milk
2 egg yolks
4 spoons sugar
2 fulls spoons flour
vanilla flavour
lemon flavour
Fresh fruits
Food grade gelatin for glazing
*this last ingredient is actually a bit unortodox..in the, let's say, proper recipe no baking powder is required..up t you!
**Again, the classical recipe for custard has many more eggs, but this lighter alternative is very nice as well..fell free to replace it with your ownn custard recipe!
Preheat the oven to 180°, and start preparing the crust: work the flour with the butter until you obtain a crumbly mixture, then form a fountain with it and add the sugar, the eggs, the lemon zest, and, if you use it, the baking powder. Quickly work the ingredients (somewhere I read that you only need 7 minutes) until you obtain a ball of dough. Wrap it in plastic and let it rest in the fridge for about 30 minutes.
Once this time has passed, with the help of a rolling pin form a sheet of pastry, that should be about 1.5-2 cm thick, and lay it in a buttered and floured tray. Cover the dough with baking paper and dry beans, so that you obtain a uniform layer once the pie is cooked. Bake in the oven for 40' and let it cool down completely.
To prepare the custard warm up some milk with the lemon and vanilla flavors. In a separate container whisk the eggs with the sugar, then add the flour. Mix the warm milk to the mixture and put it again on the stove. Keep stirring and cooking until the custard boils. Cover with a sheet of plastic foil to avoid the formation of a thick film on the surface, let it cool down a little bit, and then pour it in the pie, making sure to cover it homogeneously.
Once the custard is completely cold add the fruits you chose for your pie, trying to make it pretty (and prettier than mine! :P)
In order to avoid that the fruit gets dark I add a gelatin glazing: I use this powder that you melt in water, boil up and then brush over the pie...et voilà!
PS: Sorry about the picture, it is not a nice one...It was taken years ago, but this is the only one I took a picture of..next time I will be less stingy with the fruit!
Frutta fresca a scelta
