Chocolate brushed lebkuchen with raspberry jam



Ciao a tutti! Eccomi tornata con un nuovo post, sono davvero contenta di essere riuscita a pubblicare di nuovo in così poco tempo! :) Ancora una volta il post sàrà solo in italiano, spero davvero di poter aggiungere le traduzioni al più presto.
Per prima cosa vorrei ringraziare anche qui Alessandra del blog La cucina di zia Ale, Fabiana del blog Non solo pasticci e Stefania del blog (ora sito) Arabafelice in cucina per aver organizzato il contest "Profumo di Natale", che la mia casetta di pan di zenzero ha vinto come ricetta più natalizia! Urrà! ^_^ Ancora grazie di cuore!
Sono davvero felice e anche devo ammettere emozionata per questo risultato arrivato dopo un anno in cui purtroppo ho potuto dedicarmi molto poco ai miei hobby. E' stato un ritorno davvero alla grande!
Galvanizzata dalla bella notizia, mi sono tuffata subito nella produzione di queste Lebkuchen, dolcetti natalizi della tradizione tedesca, forse tra i miei dolci preferiti qui in Germania.
Lo spunto è stato quello del re-cake, una manifestazione a cui ho partecipato con l'ultimo post prima della lunga pausa lontana dal blog. Ispirandomi ad una versione con la marmellata di albicocche che ho assaggiato un paio di settimane fa e che mi è molto piaciuta, ho deciso di apportare una piccola variante aggiungendo della marmellata di lamponi all'interno delle Lebkuchen. Il risultato è stato davvero ottimo. L'asprigno dei lamponi smorza un po' il dolce di questi biscotti, e il sapore si sposa perfettamente coi profumi del mix di spezie, che trovo favoloso!
Praticamente questo weekend non ho mangiato altro! :D :D :D




Veniamo alla ricetta. Per preparare le Lebkuchen vi serviranno:

200 g di marzapane
200 g di zucchero (io 50 semolato e 150 di cassonade blonde*)
50 g di scorzette di limone candite**
50 g di mandorle macinate
50 g di nocciole macinate
4 albumi
100 g di farina
2 cucchiaini di mix per Lebkuchen**
1/2 cucchiaino di sale
2 fogli di ostia (Io ho usato dei dischi di ostia del diametro di 7 cm - ingorda! :D)
100 g di cioccolato fondente
100 g di cioccolato bianco

A piacere: marmellata di lamponi

Per il mix di spezie per  Lebkuchen
2 cucchiaini di cannella macinata
2 cucchiaini di chiodi di garofano macinati
1/2 cucchiaino di pepe nero
1/4 di cucchiaino di noce moscata
1/2 cucchiaino di coriandolo
1/2 cucchiaino di cardamomo macinato
1/2 cucchiaino di semi di anice macinati
1/2 cucchiaino di zenzero macinato

*la cassonade blonde è uno zucchero grezzo di canna, simile al light brown sugar, dal sapore particolare, che ricorda molto quello del muscovado. L'ho comprata a Bruxelles lo scorso mese, qui è praticamente introvabile. 
**Io ho utilizzato un mix di spezie per Lebkuchen già pronto, che si trova al supermercato, e che già contiene scorze di arancia e limone.

In una ciotola, o nella vasca della planetaria, sciogliete il marzapane con i 4 albumi, il sale e lo zucchero. Mescolate fino ad ottenere un composto omogeneo. In un recipiente a parte unite la farina setacciata al mix di spezie, il bicarbonato, la farina di mandorle e di nocciole. Unite al composto di uova e mescolate fino ad ottenere un impasto che sarà piuttosto morbido. 
Disponete le ostie su una teglia coperta da carta da forno e, con l'aiuto di una sac-à-poche, distribuite l'impasto sulle cialde stesse, lasciando un po' di margine perché i biscotti cresceranno in cottura.
I primi biscotti li ho fatti senza ripieno per testarne la riuscita. Quando mi sono resa conto che le Lebkuchen risultavano un po' bassine ho deciso di mettere l'impasto (già dentro la sac-à-poche) a riposare in freezer, in modo da avere una consistenza più sostenuta. In questo modo per le successive lebkuchen sono riuscita ad aggiungere la marmellata di lamponi e un ulteriore strato di impasto, ottenendo dei dolcetti ripieni.
Cuocetei n forno già caldo a 180 gradi per circa 15-20 minuti. Lasciate raffreddare. 
Per la copertura ho deciso di temperare il cioccolato, in modo da ottenere (speravo -.-') una superficie più lucida. Inoltre avevo già in mente di utilizzare il cioccolato avanzato per preparare dei cioccolatini da usare come decorazione per le fotografie, quindi ho pensato fosse il modo migliore di procedere. Potete anche seguire le indicazioni orginali della ricetta, e sciogliere il cioccolato a bagnomaria.
La procedura che ho utilizzato per temperare il cioccolato è quella cosiddetta per inseminazione: si mette da parte un terzo del quantitativo di cioccolato che si vuole utilizzare (in questo caso 30 grammi), e si fonde il rimanente (Io ho usato il microonde alla massima potenza) ad un temperatura che dipende dal tipo di cioccolato. Per la cioccolata fondente questa corrisponde a 51 gradi, per quella bianca e quella latte 45 gradi. A questo punto si unisce il cioccolato messo da parte a quello fuso e si mescola energicamente per potare per abbassare la temperatura fino a 30 gradi per il fondente, e 28 per il cioccolato bianco. Come ultimo passaggio si rimette rapidamente la ciotola nel microonde per rialzare le temperature fino a quella di utilizzo, che corrisponde a 31 gradi per il fondente e 30 per il cioccolato bianco e quello al latte.
Il risultato purtroppo non è stato perfetto: delle striature, dovute ad una non corretta cristallizzazione del burro di cacao, erano visibili nei cioccolatini e sulla superficie delle Lebkuchen, segno che qualcosa è andato storto in fase di temperaggio. Era prima volta per me, perciò non demordo! Sicuramente nel tempo migliorerò ;)
In ogni caso questo è un metodo veramente rapido e semplice per temperare il cioccolato senza la necessità di avere a disposizione un tavolo di marmo, che onestamente non saprei dove mettere, e che sarebbe causa di un divorzio ancor prima del matrimonio! :D :D :D
Avendo usato il microonde per fondere il cioccolato, praticamente ho sporcato una sola ciotola. Fenomenale, no? 
A questo punto spennellate di cioccolato la superficie delle Lebkuchen, che nel frattempo si saranno raffreddate, e lasciate solidificare.
Et voilà, sono pronte! Facili, veloci e davvero ottime!!!
L'aggiunta del lampone poi è davvero perfetta, dà quel tocco in più che ho gradito davvero tanto :) Provare per credere! ;)

Chocolate chip cookies by Luca Montersino - and my late wishes for a happy 2014


Hello everyone! Here I am, back from some long, relaxing Christmas holidays that I spent in Italy with my friends and family, after being away for a whole year...It was such fun being there, seeing everyone again...I really needed it. Leaving is never easy but it's also nice to go back to the everyday routine, the small, cozy habits I am slowly developing in my house here in Germany. Those include, among other things, this blog and some fun time in the kitchen. It was time to play again with eggs, butter, flour, and, last but not least, my beloved kitchen machine! I selected these cookies, that I found in the book Croissant e biscotti by Luca Montersino,  as the winners of the "first recipe of 2014" award. They are easy and fast to prepare....even faster to eat! I made them on Friday evening after work, and I had was seriously concerned that by Saturday morning there would be none left to take pictures of...Fortunately I fell asleep quite early, so, ladies and gentlemen, here is the recipe!

450 gr flour
300 gr of butter, room temperature
120 gr eggs
225 gr brown sugar (I used Muscovado sugar)
30  gr honey
1 gr salt 
1 vanilla bean
6 gr baking powder 
200 gr chocolate chips

Beat together butter, sugar, honey, vanilla and salt, drizzle in the eggs, then add flour, baking powder and finally stir in the chocolate chips. With the help of a pastry bag (I actually used a spoon, it was easier and faster for me to do so) distribute the dough over a parchment lined baking sheet. Bake at 180° for about 15'. Let them cool down - if you manage - and have them with a nice, hot cup of coffee. :)

Just a couple of notes: since I was afraid that following the original recipe I would end up with enough cookies to feed an army, I took one egg, weighted it (it was 65 grams), and decreased the other ingredients proportionally. In the end I got about 15 medium sized cookies.  I was quite happy with the result, I think that the honey and the Muscovado sugar added some very interesting flavours to the cookies. They turned out to be quite crumbly, which I don't mind, but if you are looking for a chewy cookie recipe (they are my favourite), well, this is not the one. And if you have one, please share. :)

CHOCOLATE CHIP COOKIES SECONDO MONTERSINO - E I MIEI AUGURI IN RITARDO PER UN FELICE 2014


Salve, salve, salve! Eccomi tornata dalle lunghe e rilassanti vacanze natalizie, trascorse in Italia dopo un anno esatto di assenza...mi ci voleva proprio! Ho passato delle giornate fantastiche in giro per la mia adorata Roma, ho rivisto amici e famiglia...una carica di energia per l'anno che verrà. Andarsene non è mai facile, ma tornare alla routine, alle piccole, confortanti abitudini che sto pian piano costruendo a casa mia qui in Germania è piacevole, nonostante tutto. Tra queste abitudini ci sono il mio blog e i miei pasticci in cucina, ed era quindi giunto il momento di tornare a divertirmi un po' con uova, zucchero e farina...e, ovviamente, la mia amata planetaria!!! Questi cookies, tratti dal libro Croissant e Biscotti di Luca Montersino, hanno vinto il premio di prima ricetta del 2014: sono facili e veloci da realizzare, e ancora più da mangiare! Li ho preparati venerdì sera al ritorno da lavoro, e ho temuto seriamente che non ne sarebbe rimasto nessuno da fotografare la mattina dopo!!! Fortunatamente mi sono addormentata presto, quindi, signore e signori, la ricetta:

450 gr farina
300 gr burro a temperatura ambiente
120 gr uova
225 gr brown sugar  (io Muscovado)
30  gr miele
1 gr sale
1 vanilla bean
6 gr lievito per dolci
200 gr gocce di cioccolato

Montate leggermente il burro con lo zucchero, la vaniglia, il miele, e il sale. Unirt le uova a filo, quindi aggiungere la farina con il lievito, e infine le gocce di cioccolato. Distribuite delle piccole quantità di impasto su una teglia rivestita di carta da forno con l'aiuto di un sac-à-poche (io ho usato un semplice cucchiaio, mi è risultato più semplice così). Cuocete in forno caldo a 180° per circa 15 minuti. Lasciate raffreddare se riuscite, e gustate con una bella tazza di caffè fumante. :)






Giusto un paio di osservazioni: poichè temevo che con le quantità indicate in ricetta avrei prodotto quantità industriali di biscotti, ho pesato un uovo (65 gr), e modificato in proporzione il contenuto degli altri ingredienti. Ho così ottenuto una quindicina di cookies di medie dimensioni. Insomma, fate voi. ;)
Ho apprezzato molto questa ricetta, il miele e il muscovado aggiungono degli aromi molto interessanti alla preparazione - e poi c'è il cioccolato: potrebbe non piacermi? ^_^
I biscotti che ho ottenuto sono abbastanza friabili, cosa che non disdegno affatto, ma se cercate una ricetta per dei cookies stile Subway, di quelli un po' gommosetti - che io adoro - non credo che questa faccia per voi. Se ne avete una vostra, condividetela e ve ne sarò immensamente grata!

Muscovado caramel cookies



Finally I made them too! And finally I found the time to sit down for a little bit and write a new post!
I've been quite busy at work lately, and I also felt a bit lazy, but I decided it's time to bring some life to my blog, so here we are. :)
The recipe for these cookies is by Luca Montersino, a very famous Italian confectioner, and they are simply gorgeous! They are prepared using brown sugar and Muscovado sugar, that is a very flavorsome. The only tricky part of the recipe the dry caramel, quite burning prone, but it is totally worth the effort!
Here's what you're gonna need:

90 gr brown sugar
25 gr cream
175 gr butter
25 gr Muscovado sugar
275 gr flour

Start preparing the dry caramel: pour some brown sugar (one or two spoonfuls) in a pot over medium heat and when it liquifies and starts caramelizing add another spoon. Repeat the procedure until the brown sugar is over. Add the cream being careful not to get burnt as hot steam will be produced and the cream might boil violently and splatter. At this point, away from the stove, add in the butter little by little, stirring energetically. If it separates from the caramel it won't be a problem. Let the mixture cool down completely and finally add flour and Muscovado sugar and mix until combine. Roll down the dough into a sheet between two parchment paper foils and let it rest in the fridge for half a day.
Once this time has passed, cut the cookies, roll them into some more Muscovado sugar and
bake them at 180 degrees for 12-13 minutes.

I made these cookies twice so far, once only with cane sugar (and they were delicious even like this), and once with Muscovado sugar. The second ones were a bit sweeter according to me, but a bit more aromatic due to the presence of Muscovado. They reminded me of some cookies the have around Germany around Christmas, so next time I will experiment adding some ginger and almonds, because I think they will fit very nicely.

If you want some tips on how to make caramel, David Lebovitz's website provides very useful information, also regarding some precautions you might want to take not to get burnt (caramel can be pretty nasty in this respect).
What else can I say? Try them!!!





FROLLINI AL CARAMELLO MUSCOVADO




Finalmente ce l'ho fatta! Dopo un periodo piuttosto intenso a lavoro e uno successivo di enorme pigrizia, ho trovato il tempo e la voglia di sedermi davanti al pc e aggiornare il blog! Lo stavo abbandonando un po' poverino...!
La ricetta di questi biscotti è dell'ormai conosciutissimo Luca Montersino, è la prima che provo delle sue, e devo dire che è fantastica! L'ingrediente segreto, per così dire, è una qualità di zucchero di canna chiamato Muscovado, molto molto profumato! L'unico passaggio che richiede un po' di attenzione è la preparazione del caramello a secco, perchè (ahimè ne sono testimone) è abbastanza facile da bruciare, e a quel punto lo si deve buttare...ma in ogni caso ne vale assolutamente la pena!
Ecco quello che vi servirà:

90 gr zucchero di canna
25 gr panna
175 gr burro
25 gr zucchero Muscovado
275 gr farina

Come prima cosa preparate il caramello a secco: in un pentolino scaldate poco zucchero di canna, e, solo quando sarà completamente caramellato, aggiungete un altro cucchiaio di zucchero. Attendetene la caramellizzazione e aggiungete altro zucchero; ripetete il procedimento fino a terminare i 90 grammi previsti dalla ricetta. A questo punto unite la panna bollente, facendo attenzione a non scottarvi perchè il composto bollirà in maniera piuttosto forte.  Allontanatevi dal fuoco e unite il burro poco a poco mischiando vigorosamente per amalgamarlo al caramello (anche se i due composti resteranno un po' separati non preoccupatevi). Lasciate raffreddare quindi unite la farina e lo zucchero Muscovado. Stendete l'impasto aiutandovi con due fogli di carta da forno - meglio se potete già stenderlo all'altezza desiderata - e lasciatelo riposare in frigo per mezza giornata (io di solito lo preparo il giorno prima).
Passato questo tempo, estraete l'impasto dal frigo, se necessario stendetelo ancora, e ritagliate i biscotti della forma che preferite. Cospargeteli con altro zucchero Muscovado e cuoceteli in forno già caldo a 180° per 12-13 minuti.   

Ho preparato questi biscotti due volte finora, una solo con zucchero di canna (ed erano deliziosi già così), una con zucchero di canna e Muscovado, come da ricetta. Nel secondo caso li ho trovati leggermente più dolci, ma anche più aromatici, vista la presenza del Muscovado. Il sapore ricorda un po' quello di alcuni biscotti che trovo qui in Germania, specialmente nel periodo natalizio, perciò la prossima volta sperimenterò aggiungendo dello zenzero e delle mandorle a filetti :D

Chocolate chips cookies with Nutella and almonds


Hello! Here I am, as promised, to share the recipe of these cookies, that I found here.
I added some minced almonds to the original recipe, cause I had prepared some almond milk and didn't want to toss the leftover nuts; what can I say...even my boyfriend, who is not a chocolate lover (don't know how this is possible) found these cookies really delicious!

235 gr flour
75 gr granulated sugar
50 gr brown sugar
110 gr almonds, minced
113 gr butter, room temperature
1 egg
1/2 tsp salt
1/2 tsp baking powder
1 tsp pure vanilla extract

chocolate chips
Nutella

Mix flour with salt and baking powder.
In a separate bowl beat butter and sugars until pale and fluffy, add the vanilla, then the egg, and mix until combined. Add the dry ingredients, always mixing, and finally the almonds and chocolate chips.
Take a spoon of dough, flatten it on the palm of your hand, distribute some Nutella in the center, and form a ball, so that all the Nutella stays the inside the cookie.
Trasfer the cookies in a parchment-lined baking sheet, spacing them, and bake for at 175° for about 20', until golden.




COOKIES CON GOCCE DI CIOCCOLATA, NUTELLA E MANDORLE




Ciao! Eccomi, come promesso, a condividere la ricetta di questi cookies, trovata qui.
Ho modificato la versione originale aggiungendo delle mandorle tritate, avanzate dalla preparazione del latte di mandorle, e che non mi andava di buttare; che dire...persino il mio ragazzo, che non è un amante del cioccolato (non mi chiedete come sia possibile, non ne ho idea), ha trovato questi cookies davvero deliziosi!

235 gr farina
75 gr zucchero semolato
50 gr brown sugar
110 gr mandorle tritate
113 gr burro morbido
1 uovo
1/2 cucchiaino sale
1/2 cucchiaino lievito per dolci
1 cucchiaino estratto di vaniglia

gocce di cioccolato
Nutella

Mischiate la farina, il sale, e il lievito per dolci.
In un contenitore a parte, lavorate il burro con gli zuccheri fino ad ottenere un composto soffice. A questo punto unire l'estratto di vaniglia, quindi l'uovo, sempre mischiando. Aggiungere poco a poco gli ingredienti secchi, le mandorle e per ultime le gocce di cioccolato.
Preparate i cookies: prendete circa un cucchiaio di impasto, appiattitelo sul palmo della mano, e mettete un po' di Nutella al centro del disco così ottenuto. Chiudete formando una pallina, facendo il modo che la Nutella sia tutta racchiusa nell'impasto.
Trasferite i cookies ben distanziati in una teglia rivestita di carta da forno e cuocete in forno preriscaldato a 175° per 20'-25', finché i cookies diventano dorati.

Rosemary crunchy crackers




A couple of weeks ago I got this tiny piece of natural yeast (sourdough), sent by my aunt all the way to Germany...it is the first time I deal with such a thing, and I am no expert in breads nor have the time to bake all that often...and this resulted IN a HUGE amount of dough that kept growing and growing, pretty much uncontrolled! Luckily enough I found this easy and quick recipe on the blog Cappuccino e cornetto , so I could use of most of it. Plus, these crackers were my everyday snack when I was in high school. I had to make them! ^_^

200 gr discarded sourdough*
250 gr flour
50 gr butter
2 tbsp olive oil
70 gr water
8 gr salt

rosemary
salt in grains


*the sourdough must be "unfed" . What I do is I feed my sourdough, I keep in the fridge, and after 5 days I take away the part I need for this preparation, and feed the rest. This allows to have reasonable amounts of dough in your fridge without having to throw away the part you discard.

Form a fountain with the flour in a large bowl, add the oil and the butter in the middle.
In a separate bowl, melt the sourdough in 70 gr of warm water, then add to the flour. Mix briefly, then add the salt (you do this cause salt should never directly touch yeast), and knead until you get a smooth dough. Roll it down into a sheet about 3-4 mm thick, cut it into rectangles and distribute them on a parchment lined baking sheet. Brush each cracker with an emulsion of oil and water, then sprinke with rosemary and a few grains of salt. Bake at 190 degrees for 20-30' until golden.





I brushed the crackers with oil andd water so that the salt would stick to them, and the rosemary wouldn't burn. I also tried different versions: with paprika, olives, speck, cheese and black pepper...you can have fun trying different ones!


SCHIACCIATINE AL ROSMARINO CON GLI ESUBERI LIEVITO MADRE




Un paio di settimane fa mi è arrivato un pezzettino di lievito madre, mandato da mia zia da Roma fino a qui, in Germania...è la prima volta che ho a che fare con la pasta madre, non sono un'esperta in panificazione, e non nemmeno tanto tempo durante la settimana per preparare pani e lievitati...la naturale conseguenza di tutto ciò è stata ritrovarmi dopo pochissimo tempo con una quantità SPROPOSITATA di lievito madre che cresceva praticamente incontrollato...O_o
Per fortuna ho trovato questa ricetta sul blog della simpaticissima Cranberry, Cappuccino e cornetto, che mi ha permesso di smaltire un po' di esuberi. E poi le schiacciatine erano la mia merenda ai tempi del liceo, perciò non potevo non provare! ^_^
Riporto ingredienti  e preparazione

200 gr lievito madre non rinfrescato
250 gr farina 0
50 gr burro
2 cucchiai d'olio
70 gr acqua
8 gr sale

rosmarino,
sale grosso

In una ciotola capiente disporre la farina a fontana e porre al centro il burro e l'olio.
A parte sciogliere il lievito madre nei 70 gr di acqua tiepida, versarla al centro della fontana e impastare brevemente. Aggiungere il sale e continuare a lavorare finché non otterrete un impasto liscio. Stenderlo con l'aiuto di un mattarello fino ad ottenere una sfoglia non troppo spessa (circa 3-4 mm), ritagliate le vostre schiacciatine, spennellatele con un'emulsione di acqua e olio, e cospargetele di sale grosso e aghi di rosmarino. Infornate a 190° per 20-30 minuti, finchè non saranno ben dorate.



Ho spennellato le schiacciatine con olio e acqua per far sì che il sale grosso non cadesse via, e per prevenire la bruciatura degli aghi di rosmarino.
Ho preparato queste schiacciatine in numerose varianti: alla paprika, allo speck, alle olive, al formaggio e pepe...insomma, c'è da sbizzarrirsi! :)

Peanut butter raspberry jam thumbprint cookies



Hello again! It's a bright, warm Sunday morning and here I am, sharing with you another recipe "stolen" from Martha Stewart's website! :)
I have to warn you though, if you are looking for something light, you might as well stop reading right now, 'cause these cookies are, let's say, quite rich! ^_^
I have been willing to try peanut butter cookies for a while, and in the end I choose this one, as it also gave me the chance to try it in combination with jam...I heard nice things about it, and I must say...they are true! Try and see for yourseleves! :)

Ingredients:

1 1/4 cups (170 gr) flour
1 large egg
1 stick (113 g) softened butter
3/4 cup (130 gr) peanut butter
1/3  cup  (65 gr) light-brown sugar
1/3 cup (65 gr) granulated sugar
1 tsp pure vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1/tsp salt

Raspberry jam (can be replaced with any jam)
granulated sugar for rolling

Preheat the oven at 175°.
Mix flour, baking powder, baking soda and salt. In a separate bowl, whisk butter and peanut butter until you get a smooth mixture.



Add the sugars and whisk until pale and fluffy, then pour in the vanilla extract and the egg. Add the flour mixture and mix until combined.




Form balls with about 1 tbsp of dough, roll them in sugar and distribute them on a parchment lined baking sheet, spacing them as they will flatten out while baking.
Bake at 175° for 10 minutes, take them out and delicately press the center of the cookies to form small craters in your cookies :)
Supposedly one could/should (?) do it with a thumb (hence the name of the recipe) but I don't see how one could stick a finger in such a hot thing without consequences! :D  Strong supporter of the "better safe than sorry" phylosophy I opted for the back of a wooden spoon!

Cook for 6-7 more minutes, until golden. Let them cool down completely, then warm up the jam for a few seconds, just so that it gets a bit more liquid and it is easier to pour in the cookies. Spoon about 1 teaspoon into each crater...and enjoy!




BISCOTTI AL BURRO D'ARACHIDI E MARMELLATA DI LAMPONI





Ciao a tutti! E' una domenica mattina calda e soleggiata, ed eccomi qui, a condividere un'altra ricetta "rubata al sito di Martha Stewart! :)
Vi avverto: se siete a dieta e cercate qualcosa di leggero, potete smettere di leggere questo post, perchè questi biscotti sono, come dire...piuttosto ricchi! ^_^
Era da un po' che volevo provare una ricetta di biscotti al burro di arachidi; dopo tanto cercare ho scelto questa, perché mi ha permesso di sperimentare la tanto lodata combinazione di questa crema spalmabile con la marmellata...beh, le lodi sono più che giustificate! Provate e verificate voi stessi!

Ingredienti:

1 1/4 cups (170 gr) farina
1 uovo grande
1 stick (113 g) burro morbido
3/4 cup (130 gr) burro di arachidi
1/3  cup  (65 gr) light-brown sugar - o zucchero di canna
1/3 cup (65 gr) zucchero
1 cucchiaino di estratto di vaniglia
1/2 cucchiaino lievito per dolci
1/2  cucchiaino bicarbonato
1/2  cucchiaino sale

Marmellata di lamponi (si può sostituire con una qualunque marmellata)
Zucchero per la copertura

Unite la farina, il lievito, il bicarbonato e il sale.
In una ciotola a parte sbattete il burro morbido con il burro di arachidi finché otterrete un composto liscio.




Aggiungete lo zucchero di canna (o il brown sugar) e lo zucchero semolato, e sbattete finché otterrete un composto bianco e morbido. Aggiungete l'uovo e l'estratto di vaniglia e mescolate, infine unite gli ingredienti secchi, lavorandoli finché non saranno completamente amalgamati.






Formate delle sfere con circa 1 cucchiaio di impasto, rotolatele nello zucchero e disponetele ben distanziate su una placca rivestita di carta da forno.
Infornate a 175° per 10 minuti, quindi sfornatele e premete delicatamente il centro dei biscotti per formare dei piccoli crateri :)
In teoria questa operazione potrebbe/dovrebbe (?) essere fatta con il pollice (da qui il nome thumpbrints - impronta di pollice :D), ma non riesco ad immaginare come uno possa infilare un dito in una cosa così calda senza conseguenze! Per la serie "meglio restare sul sicuro" ho optato per il manico di un cucchiaio di legno!

Cuocete per altri 6-7 minuti, finché i dolcetti non saranno dorati. Lasciate raffreddare completamente, quindi scaldate appena la marmellata, giusto il tempo necessario affinché diventi un po' liquida, e versatene circa 1 cucchiaino in ogni craterino...buon appetito!
