From my mom's cookbook: Nutella and coconut roll


What I am going to share with you today is another recipe from my childhood, often part of the menu for my birthdays parties, coming straight from my mom's cookbook. So many memories, flavours, emotions are hidden between those pages...Just looking at my mom's writing feels like going back in time, when I used to help her making these recipes...and, well, that often meant cleaning the leftover dough from the bowls and eating it...from my fingers! I don't think I can properly describe what I feel, but I am sure that those who shared similar experiences knows exactly what I mean..


...even the stains on the page make me feel nostalgic! ;)
Anyways, enough with this sentimentalism, here are the ingredients and the steps to follow (with my tiny changes):

125 gr flour
125 gr sugar
3 eggs
1 lemon zest
1/2 bag baking powder

Nutella
Coconut flour


Whisk the eggs with the sugar for at least 20', until you get a white, foamy mixture.




Fold in gently flour and baking powder, then add the lemon zest.  Line the bottom of a cookie pan with baking paper and pour in  the dough. Bake at 180°for 10-15 minutes.
My pan was 30x40 and I didn't cover it all, say 2/3 of it; the point is to have a layer that is about 1.5 cm thick. Don't bake it for too long (maybe 10 minutes are better than 15), or the roll will crumble down when you roll it.  When the dough is ready cover it with a damp kitchen cloth, roll the everything, leaving the parchment paper in the inside and the cloth on the outside.



Wait about 10 minutes for the roll to cool dow, open it, remove the baking paper and spread your favourite filling. I used Nutella and coconut flour (unbelievable ;P ). A combination that never fails! ;)




Form a roll, wrap it in plastic film and let it rest in the fridge for a couple of hours.




Before serving the roll I removed the external slices that, as you can see from the picture below, don't look so nice...an excuse to eat them myself, cause they might be ugly, but they're still good! ;)


Obviously you can fill the roll with whatever you prefer: lemon custard, coffee custard, jam...if you opt for the latter, this recipe also becomes lactose-free!



DAL QUADERNO DI RICETTE DI MIA MAMMA: ROTOLO DI NUTELLA E COCCO




Oggi vi presento un'altra ricetta della mia infanzia, un must delle feste di compleanno tra parenti o amici, direttamente dal quaderno di ricette di mia mamma. Quanti ricordi, emozioni e sapori sono nascosti tra quelle pagine...Solo a vedere la grafia di mia madre mi sembra di tornare indietro a quando ero bambina, e la aiutavo a preparare questi dolci...e spesso il mio contributo si riduceva a mangiare l'impasto rimasto nelle ciotole...direttamente con le dita!  Non credo di riuscire a descrivere a parole quello che provo, ma sicuramente chi ha condiviso esperienze simili potrà capire il turbine di emozioni in cui mi sono ritrovata guardando questa foto..



...attimi di vita vissuta, di cui le la zozzeria sulla pagina è testimone! ;) Insomma, casa mia...
Beh, bando alle ciance e alla vena nostalgica, trascrivo ingredienti e procedimento (con le mie piccole modifiche):

125 gr farina
125 gr zucchero
3 uova
la buccia grattugiata di un limone
1/2 bustina di lievito.

Nutella
Farina di cocco

Montare le uova intere con lo zucchero per almeno 20', o finché non otterrete un composto bianco e spumoso. 



Unite poco a poco la farina setacciata con il lievito con l'aiuto di una spatola, con il solito movimento dal basso verso l'alto, quindi la buccia del limone. Disponete l'impasto così ottenuto su una placca da forno, e cuocete a 180° per 10-15 minuti. Io ho usato una teglia 40x30 circa, che ho coperto per 2/3 in lunghezza e in larghezza. In ogni caso assicuratevi che l'impasto rimanga un po' altino, circa 1.5 cm.
Non esagerate con la cottura, pena un dolce friabile che si sbriciolerà mentre lo arrotolate. 
Quando il dolce sarà pronto, sfornatelo e copritelo con un panno da cucina inumidito. Arrotolate il tutto, compresa la carta da forno, in modo che il panno resti all'esterno.




Attendete una decina di minuti, srotolate nuovamente il dolce, rimuovete la carta da forno e farcite con ciò che più vi piace. Io ho messo (da non crederci! ;P ) Nutella e farina di cocco. Un connubio infallibile! ;) 



Arrotolate il dolce dal lato più lungo, avvolgete nella carta da forno e ponete a riposare in frigo, diciamo almeno un paio d'ore. 


Prima di servire ho rimosso le fette più esterne, che, come testimonia la foto qui sotto sono un po' stortarelle...una scusa per sbafarmele, perchè saranno pure brutte, ma sono buone lo stesso! ;) 


Ovviamente potete modificare la farcitura a vostro piacimento: creme al limone, caffè, marmellata...se mettete quest'ultima, il dolce diventa pure lactose-free! ;)

Flourless double chocolate cookies





These cookies made my day...I was looking for a gluten-free, lactose-free dessert for a dinner among friends...so no flour, no milk, no butter...how am I gonna do this? Thank God, or rather thanks to Arabafelice I found the recipe of these cookies...Super quick, super simple, and really really nice! At the end of the dinner there was just one cookie left, everybody was too shy to finish them, I guess! ;)
Here are the ingredients:

180 gr confectioners' sugar
70 gr dark chocolate
45 gr cocoa powder
2 egg whites
100 gr of nuts*
a pinch of salt

*I used hazelnuts, but you could put almonds, walnuts, or a mixture of the above

Preheat the oven at 160°.
With the help of a knife chope the nuts and the chocolate in small pieces.
Mix the sugar, the cocoa powder and the salt in a bowl, and add nuts and chocolate crumbles to the mixture. Pour in the unwhisked whites and fold briefly and gently until all the ingredients are combined.
Lay a sheet of baking paper in a baking tray and with the help of a spoon distribute the dough in small piles, well separated from each other. In the original post by Arabafelice you can see a picture showing what I mean, if I was not clear enough.
Bake for 25' and let cool down completely before eating (if you can :P).
I  really loved these cookies, so easy and quick to prepare, but so nice and chocolaty! Next time I will try them with coconut flour...yum!



BISCOTTI AL DOPPIO CIOCCOLATO




Questi biscotti mi hanno salvato...cercavo una ricetta per un dolce che fosse senza glutine né lattosio...quindi senza farina, burro, latte...ossignore, cosa fare?! Grazie a Dio, o meglio, grazie ad Arabafelice, ho trovato questi biscotti...super veloci, super semplici, e davvero buonissimi! Finita la cena c'era un solo biscotto rimasto, il biscotto della vergogna: l'ultimo, solitario dolcetto che per educazione nessuno si azzarda a toccare! ;)
Ecco a voi la lista degli ingredienti:

180 gr zucchero a velo
70 gr cioccolato fondente
45 gr cacao amaro in polvere
2 albumi
100 gr nocciole*

*se preferite potete sostituirle con noci o mandorle, o un mix di frutta a guscio. 


Preriscaldare il forno a 160°.
Con l'aiuto di un coltello spezzettate finemente il cioccolato fondente e le nocciole. In una ciotola unite  zucchero a velo, farina, cacao e sale. Unite le nocciole e il cioccolato fondente, quindi gli albumi non montati (non è fantastico?! ;) ), mischiando velocemente fino ad amalgamare il tutto.
Disponete dei mucchietti di impasto su una teglia che avrete coperto con carta da forno, distanziandoli per bene tra di loro. Sul post originale di Arabafelice potrete trovare delle foto che illustrano questo ultimo passaggio. Cuocere in forno per circa 25'e lasciate raffreddare prima di servire (se riuscite a resistere! ;) )
Ho davvero apprezzato questa preparazione, come ho gia' detto semplice e veloce, ma dalla riuscita assicurata!  La prossima volta proverò con la farina di cocco..Gnam!

Cinnamon apple cake




I am quite in a cooking mood these days... I left pencils, colors and clay aside, and I spend my days looking for nice recipes to prepare...
Yestarday was the turn of another cake coming straight from my childhood, my mother's apple cake!
I must admit that I am not a big fan of cooked fruit, and a dessert with no chocolate rarely catches my attention...but I can easily make an exception for this one!
It is quite easy to prepare, the part that takes most of the time is cutting the apples and placing them radially to obtain the effect you see in the picture. Still, it could be worse!
Here's what you will need

300 gr flour
150 gr sugar
90 gr butter
2 eggs
1 bag of baking powder
3/4 glass milk
3 or 4 apples (I used a type that's called Golden)
1 teaspoon of cinnamon

Preheat the oven at 180°. Melt the butter and mix it with the sugar. Add the eggs, then the flour, little by little, and whisk until you get a homogeneous dough. Stir in the milk and when it's completely mixed add the cinnamon and one bag of baking powder. Pour the mixture you obtained in a baking tray, that you have buttered and floured in advance. Cut the apples is slices as thin as you can an distribute them radially on the cake, starting from the center and then moving out towards the edge.


I hope the picture is self-explainatory, you have to insert the apple slices vertically in the pastry, without pushig them too deep in..Don't worry if they thend to bend around a little bit at the beginning, in the end the cake will be so stuffed that everything will stand in its proper position!
My mom told me that for this amount of dough she puts 4 apples, I put 3, and the space was over. She also adds some lemon to the apples so that they don't get dark, but I skipped this passage, cause it adds an extra flavour that I didn't want.
Once you have placed all the apple slices, bake for about 50' at 180°.
You can sprinkle some more cinnamon on top of the cake when it's still hot, I didn't cause I wanted it to be a delicate aftertaste, and not to dominate over the other flavours. One idea could also be to have it with some whipped cream, as they do with strudel.

I take the chance to say goodbye to my beloved kitchen scale, loyal friend and companion for years now...it went a bit nuts yesterday, claiming that an unopened package of flour weighs 600 gr...you can imagine how interestig preparing the cake was ...! ;)



TORTA DI MELE E CANNELLA




Ultimamente sono in modalità cuoca..sarà perché ultimamente passo molto tempo a leggere blog di cucina, ma ho messo via matite, colori e creta, e sono sempre alla ricerca di qualche ricetta interessante da preparare.

Stavolta hanno vinto le tradizioni, e ho deciso di preparare un'altra torta che faceva sempre mia madre, la torta di mele! Devo ammettere che non sono una grandissima fan della frutta cotta, e che un dolce senza cioccolato difficilmente attrae la mia attenzione, ma per questo posso fare un'eccezione!
E' molto facile da preparare, l'unica cosa che prende un po' di tempo è tagliare le mele e disporle sull'impasto, ma insomma, c'è di peggio!
Ecco gli ingredienti che vi serviranno:

300 gr farina
150 gr zucchero
90 gr burro
2 uova
3/4 bicchiere di latte
1 bustina di lievito in polvere
3 o 4 mele
1 cucchiaino di cannella

Preriscaldate il forno a 180°. Sciogliete il burro e sbattetelo insieme allo zucchero, quindi aggiungete le uova, la farina poco a poco, il latte, la cannella e il lievito in polvere. Versate il preparato in una teglia da forno precedentemente imburrata e infarinata. Tagliate le mele a fettine sottilissime, e disponetele a raggiera sulla torta, partendo dal centro e man mano allargandovi verso il bordo.



Spero che la foto renda la spiegazione più chiara, dovete mettere le fettine in verticale nell'impasto, senza spingerle troppo in profondità. Non vi preoccupate se all'inizio tendono un po' a piegarsi di lato, alla fine avrete così tante fette che tutto se ne starà ben incastrato e in posizione!
Mia madre mi ha detto che con queste quantità usa 4 mele, io ne ho messe 3, e poi lo spazio è finito!  Un passaggio che ho saltato, ma che lei utilizza, è di spruzzare un po' di succo di limone sopra le fettine di mela, per non farle annerire. Io ho preferito evitare, perchè non volevo che il sapore del limone alterasse quello della torta.
Una volta che avrete finito di decorare la torta, infornate a 180° e cuocete per 50-60 minuti.
Volendo,una volta sfornata, potete cospargerne la superficie dell'altra cannella, io ho preferito che restasse solo un aroma delicato, invece di un sapore dominante. Un'idea potrebbe essere quella di mangiarla con della panna montata, un po' come fanno con lo strudel.

Colgo l'occasione per salutare la mia amata bilancia da cucina, amica fedele e compagna di ricette per anni. E' andata un po' fuori di testa, la poverina, sosteneva che un pacco appena comprato di farina pesasse 600 gr...vi lascio immaginare quanto la preparazione di questa torta sia stata interessante! ;)

Juicy curry chicken legs with peppers and coconut milk





I had some friends coming over for dinner  and I decided to experiment a little bit with a dish I ate years ago at my aunt's (not the one already mentioned in this blog, but just as special!). She told me it is a Brazilian recipe called chicken moqueca, but the ingredients are different from what I found searching online. Definitions aside, it was fun to make and even more fun to eat, although  until the last second I wasn't sure that the quantites were right...I felt a bìt like this




My aunt infact has this capability of figuring out how much of what has to be put from experience and intuition...as for me, I'd be lost in the kitchen without a scale!!! Fortunately, the dish turned out to be very nice, according to the guests as well...or maybe they were just very polite! ;)



Ingredients (for 5 people)

5 whole chicken legs (drumstick+thigh)
1,5 kg peppers (red, green, yellow)
3 medium onions
curry
600 ml of coconut milk

2 and 1/2 cups of basmati rice



For the rice:
Rince the rice and put it in a pot. Cover with water (I put 1 cup of water for each cup of rice, I have also been told that one should pour water in the pot until there is about 1,5 cm water over the level of the rice). Turn on the fire; when the water starts boiling turn the heat down to minimum, cover with a lid and wait until all the water is absorbed.




For the chicken:
Heat up some oil in a pan and fry the chicken legs until golden and a bit crispy on the outside, then take them out of the pan and put them aside. In the same pan put the julienned onions and peppers, and, when they soften up a bit, add the chicken back and salt everything. Let it fry a little bit, then cover the pan with a lid to prevent it from drying too much. When the chicken is about ready add the coconut milk and a little bit of curry and let it cook for about 10 more minutes.



Serve the rice and the chicken in the same plate, pouring the juice on top.
I really like this sort of meal, with some juicy meat accompained by rice, and this version was really good! I loved the creamy texture the coconut milk gave to the sauce, and the tiny amount of spiciness from the curry...Awesome!


A few comments: the coconut milk was plenty, you can reduce it to 400 ml, which in my case was one can. The rice was also quite a bit, but when I invite people I prefer to have leftovers rather than hungry guests! ;)




COSCE DI POLLO AI PEPERONI, CURRY E LATTE DI COCCO





  
Ho preparato questa ricetta per una cena tra amici la scorsa settimana. L'avevo mangiata anni fa da mia zia (non quella già citata sul blog, ma altrettanto speciale!), che me ne ha parlato come di una ricetta brasiliana chiamata moqueca di pollo. A dire il vero cercando informazioni su internet ho trovato versioni un po' diverse, quindi non so..Definizioni a parte, mi sono divertita molto a prepararla, e anche di più a mangiarla, anche se fino all'ultimo secondo ero incerta sulle quantità...mi sentivo un po' cosi'...


Non ho idea di cosa stia facendo

Mia zia infatti è una che fa tutto ad occhio; io, dal canto mio, senza una bilancia in cucina mi sento persa!
Per fortuna la ricetta è stata un successo, a parere non solo mio, ma anche dei miei ospiti, a meno che non siano stati solo mooooolto educati! ;)



Ingredienti per 5 persone:

5 cosce di pollo, con sovracoscia
1,5 kg di peperoni (rossi, gialli, verdi)
3 cipolle medie
curry
600 ml di latte di cocco

2 tazze e 1/2 di riso basmati


Sciacquate il riso per eliminarne l'amido, versatelo in una pentola ed aggiungete una tazza d'acqua per ogni tazza di riso. Qualcuno mi ha detto che la quantità giusta di liquidi è quella per cui il livello dell'acqua nella pentola superi quello del riso di circa una falange. Portate ad ebollizione, quindi salate, abbassate il fuoco al minimo e coprite con un coperchio. Continuate la cotture in questo modo finché il riso non sarà pronto, ed avrà assorbito tutta l'acqua.




Per il pollo: scaldate dell'olio in una padella e mettete le cosce di pollo a rosolare. Quando l'esterno sarà dorato, e la pelle croccante, toglierle dalla padella e metterle da parte. Soffriggete la cipolla e i peperoni tagliati a julienne, e, quando saranno morbidi, aggiungete di nuovo le cosce di pollo. A questo punto salate il tutto, lasciate rosolare a fiamma viva per qualche minuto, per poi coprite per terminare la cottura. Quando il pollo sarà quasi pronto, versate il latte di cocco, aggiungete un pizzico di curry e tenete sul fuoco per circa 10 minuti.





Servite il pollo e il riso nello stesso piatto, versando abbondante salsa.
Apprezzo molto questo tipo di preparazioni, in cui il riso accompagna della carne bella sugosetta, e devo dire che questa versione mi è piaciuta particolarmente! Il latte di cocco ha conferito una piacevole cremosità alla salsina, e il curry secondo me dà il giusto tocco di speziato al piatto!

Solo un paio di note: il latte di cocco era molto, potete anche metterne solo 400 ml, che nel mio caso era una lattina. Anche il riso era parecchio, ma se invito qualcuno preferisco avere un po' di avanzi (che poi uno si ingegna pure a riciclare)  piuttosto che ospiti affamati! ;)

Tart with ricotta and sour cherry jam

The pie I am posting today is a typical roman/jewish meal, that you can find in bakeries in the Roman Ghetto...awesome! I have been willing to try to make it for ages, and I finally did! I prepared it as a suprise for my family that was visiting me over Easter, with my mom's home made jam...We call this type of cherries "visciole"; my grandma used to make jam out of them every year, and my mom is carrying on with the tradition! I took the recipe from the blog Labna.it, and made some small changes, which I will write for fairness but that I advice against! :D

I used my own proportions for the crust:

500 gr flour
250 gr sugar
250 gr butter
lemon zest 
2 whole eggs and 2 yolks
a pinch of baking powder*

For the filling

400 gr ricotta cheese
120 gr sugar
1 egg
vanilla flavour
lemon flavour

1 jar of sour cherry jam

*Yes, I know, we went over this in the fruit tart post

According to the original recipe one should add a couple of spoons of Sambuca to the ricotta cheese, which I didn't have, and therefore I omitted.
The vanilla flavour, on the other hand, should be added to the crust, but I forgot...and the mess begins: when I realized, I put some with the ricotta and eggs, but, afraid that it was too much, I tried to compensate adding some lemon flavour... -.-' Well..don't do it!...Fortunately the day after most of the lemon aroma sort of disappeared, and then the cake was VERY nice..But when I had my first slice the day I baked it I was so disappointed! The taste of lemon was definitely too intense, (and a bit fake as well) and was killing all the other flavours...that's the reason for it being barred in the ingredient list...
Finally, one comment about the ricotta cheese: it should be made out of sheep milk, but I used the one from cow milk, that I honestly prefer because of the milder taste.
Here is the cake...


...and here are the steps to follow: for the crust quickly mix the butter cut in pieces with the flour using the tip of your fingers, until you get a crumbly mixture and no big chunks of butter are present anymore. Add the sugar, the eggs, the vanilla aroma if you are less absent-minded than me and the lemon zest...work quickly until all the ingredients are well mixed. Form a sphere with the dough, wrap it in plastic film and put in the fridge for at least 30'.
Prepare the filling by mixing the ricotta cheese with the egg and the sugar (and Sambuca if you put any). When the dough has rested roll it out in a sheet about 1 cm thick (maybe a bit less) and cut a circle a bit larger than the base of the baking tray, so that the extra dough will form lateral edges once you put it in the tray. I used one of those trays that you can open from the side, that is also quite deep. I suggest that you do the same, cause the filling is a lot and the pie will turn out to be quite thick. 
Lay the dough in the tray, spread the sour cherry jam making sure to cover the base evenly, and pour the ricotta mixture on top. Form some stripes with the pastry and lay them on the cake. Bake at 180° for 1 hour...et voilà!



As I said, the cake was much better the day after, I don't know if the same applies in case one doesn't mess up like I did...According to the original recipe one should make the crust out of 400 gr of flour, and actually with my doses there was some extra dough...since I also had 100 more grams of ricotta, I mixed the latter with a yolk, a couple of spoons of sugar and chocolate chips and I made the small pies that you see in the picture below (I cooked them in a muffin tray) , together with an inner view of the cake!;)



I strongly suggest that you try this recipe, it is really really nice!

CROSTATA RICOTTA E MARMELLATA DI VISCIOLE

La ricetta che posto oggi è quella di un dolce tipico della tradizione ebraica romana, che potete trovare in alcuni forni che si trovano ancora oggi nel quartiere di Roma chiamato Ghetto. Era da tantissimo che la volevo provare, ed finalmente è successo! L'ho preparata a sorpresa per la mia famiglia, in visita per Pasqua qui da me, con la marmellata fatta da mia madre...quando ero piccola era mia nonna a prepararla tutti gli anni..marmellata di visciole e visciole sciroppate...e ora è mia mamma a continuare la tradizione! Se non doveste riuscire a trovarla la potete sostituire con marmellata di ciliege o amarene. La ricetta originale la potete trovare sul  blog Labna.it; io ho fatto delle piccole modifiche che riporterò per correttezza, ma che sconsiglio!

Per la frolla ho utilizzato le quantità che uso sempre:

500 gr farina
250 gr zucchero
250 gr burro
2 uova intere + 2 tuorli
la scorza di un limone grattugiata
la punta di un cucchiaino di lievito*


Per la farcitura

400 gr ricotta
120 gr zucchero
1 uovo
aroma di vaniglia
aroma di limone



1 barattolo di marmellata di visciole


*Si, lo so, ne abbiamo parlato nel post dedicato alla  crostata di frutta fresca

La ricetta originale prevede 2 cucchiai di Sambuca da mischiare con la ricotta, che io ho omesso perché non la avevo in casa. L'aroma di vaniglia dovrebbe essere aggiunto agli ingredienti per la frolla, ma io me ne sono dimenticata, quindi l'ho messo nella ricotta...e da qui nasce il pasticcio: per timore di averne messa troppa, ho provato a compensare con dell'aroma al limone..Non fatelo! Per fortuna il giorno dopo non si sentiva praticamente più e la torta era buonissima, ma al primo assaggio, il giorno che l'ho sfornata, ho provato una delusione enorme! Il profumo di limone (anche un po' finto visto che era uno di quei flaconcini che si trovano al supermercato) era decisamente troppo intenso, e copriva tutto il resto...ecco perchè lo vedete barrato nella lista degli ingredienti!  Un ultimo commento sulla ricotta: dovrebbe essere rigorosamente ricotta di pecora..io ho usato quella di mucca che qui da me si trova più facilmente, e che onestamente preferisco perchè più delicata.
Ecco la torta...




...e le istruzioni per la preparazione: per la frolla mischiate il burro spezzettato alla farina, lavorandolo con la punta delle dita fino ad ottenere un composto bricioloso. A questo punto aggiungete lo zucchero, le uova, gli aromi e il lievito (io), e impastate velocemente fino ad ottenere una pasta soda, che avvolgerete con della plastica per alimenti, e metterete in frigo a riposare per 30'. 
Per la farcitura sbattete la ricotta setacciata con lo zucchero e aggiungete l'uovo e i 2 cucchiai di Sambuca. Io, come detto, ho omesso il liquore. Passati i 30' stendete la frolla e ricavate un cerchio di dimensioni leggermente maggiori rispetto a quelle della teglia. Io ho utilizzato una di quelle tortiere a cerniera, che sono anche abbastanza profonde. Scelta saggia visto che la crostata risulta bella altina! Riponete il disco di sfoglia nella tortiera, la pasta in eccesso formerà il bordo della vostra crostata. A questo punto cospargete la base di marmellata e ricoprite con la crema alla ricotta. Ricavate delle strisce spesse dalla frolla e decorate la superficie della crostata. Cuocete in forno già caldo a 180° per 1 ora. Et voilà!


Come ho detto la torta era molto meglio il giorno dopo, ben fredda di frigo...non so se questo vale anche per la versione orginale, priva dei miei pasticci! Nella ricetta  del blog Labna.it la frolla era fatta con 400 gr di farina, e in effetti a me ne è avanzata un po'...e visto che avevo anche 100 gr di ricotta in più, ho mischiato quest'ultima con un tuorlo, un paio di cucchiai di zucchero e delle gocce di cioccolata, e ho preparato dei cestini di frolla che ho cotto in una teglia da muffin. Li potete vedere nella foto qui sotto, insieme all'interno della crostata! Gnam!


Vi raccomando davvero di provare questa ricetta, è fantastica!

Fresh fruit tart

In the past couple of weeks I've been dragged into this whole drawing thing, reading blogs, trying to figure out how to use photoshop-like programs to improve my sketches, looking for new subjects and techniques, etc...but it's time to switch the topic to something you might be more interested in...FOOD! :D
So I will share the recipe of this fruit pie, quite simple but really nice, especially in the summer, when, in my opinion, you can find the best fruits!

For the crust:
500 gr flour
250 gr sugar
250 gr butter
2 whole eggs + 2 yolks
lemon zest
1/2 teaspoon baking powder*

For the  custard:**
1/2 lt milk
2 egg yolks
4 spoons sugar
2 fulls spoons flour
vanilla flavour
lemon flavour

Fresh fruits
Food grade gelatin for glazing 

*this last ingredient is actually a bit unortodox..in the, let's say, proper recipe no baking powder is required..up t you!
**Again, the classical recipe for custard has many more eggs, but this lighter alternative is very nice as well..fell free to replace it with your ownn custard recipe! 

Preheat the oven to 180°, and start preparing the crust: work the flour with the butter until you obtain a crumbly mixture, then form a fountain with it and add the sugar, the eggs, the lemon zest, and, if you use it, the baking powder. Quickly work the ingredients (somewhere I read that you only need 7 minutes)  until you obtain a ball of dough. Wrap it in plastic and let it rest in the fridge for about 30 minutes.
Once this time has passed, with the help of a rolling pin form a sheet of pastry, that should be about 1.5-2 cm thick, and lay it in a buttered and floured tray. Cover the dough with baking paper and dry beans, so that you obtain a uniform layer once the pie is cooked. Bake in the oven for 40' and let it cool down completely.
To prepare the custard warm up some milk with the lemon and vanilla flavors. In a separate container whisk the eggs with the sugar, then add the flour. Mix the warm milk to the mixture and put it again on the stove. Keep stirring and cooking until the custard boils. Cover with a sheet of plastic foil to avoid the formation of a thick film on the surface, let it cool down a little bit, and then pour it in the pie, making sure to cover it homogeneously.
Once the custard is completely cold add the fruits you chose for your pie, trying to make it pretty (and prettier than mine! :P)
In order to avoid that the fruit gets dark I add a gelatin glazing: I use this powder that you melt in water, boil up and then brush over the pie...et voilà!

CROSTATA DI FRUTTA FRESCA

Nelle ultime settimane sono stata molto presa dal disegno, leggendo blog, cercando di capire come usare photoshop et similia per migliorare i miei schizzi, cercando nuovi soggetti e tecniche, eccetera...ma e' giunta l'ora di spostarsi verso un argomento che forse vi interessera' di piu'... CIBO! :D 
Percio' oggi pubblicherò la ricetta di questa crostata di frutta fresca, che a mio parere da' il meglio in estate, quando si trova la frutta migliore!

Per la frolla:
500 gr farina
250 gr burro
250 gr zucchero
2 uova intere e 2 tuorli
la buccia di un limone grattugiata
la punta di un cucchiaino di lievito*

Per la crema:**
1/2 lt latte
2 tuorli
2 cucchiai colmi di farina
4 cucchiai rasi di zucchero
essenza di vaniglia
scorza di un limone o essenza di limone

Frutta fresca a scelta
Gelatina alimentare per la copertura

*La maggiorparte di voi inorridirà per la presenza del lievito nella ricetta della pasta frolla...lo so, non ci va, ma questa è la ricetta di mia mamma, e la mamma ha sempre ragione! ;)

** Anche per la crema, la classica pasticcera prevede l'utilizzo di più uova, ma questa versione leggera secondo me ha il suo perchè. Chiaramente potrete sostituirla con la vostra ricetta per la crema pasticcera ;)

Preparate la pasta frolla: con la punta delle dita lavorate insieme la farina, che avrete versato sul vostro ripiano di lavoro, con il burro ammorbidito, finche' avrete ottenuto un composto bricioloso. A questo punto unite lo zucchero e formate una fontana, al centro della quale ponete le uova, la buccia del limone grattugiata, e il lievito (si, si, lo so..argh!).  Lavorate velocemente fino ad ottenere un impasto sodo, coprite con della pellicola e mettete a riposare in frigo per 30 minuti. Una volta passato questo tempo, infarinate il piano di lavoro, e con l'aiuto di un mattarello stendete la frolla in un foglio alto circa 2 cm. Trasferite in uno stampo per crostate che avrete precedentemente imburrato e infarinato, coprite con della carta da forno e uno strato di fagioli secchi, in modo che la superficie della vostra crostata, una volta cotta, sia bella uniforme. Cuocete in forno a 180° per circa 40 minuti e lasciate raffreddare.
A parte preparate la crema: mettete a scaldare il latte con i semi di vaniglia e la scorza del limone (o le essenze). In una terrina sbattete  tuorli con lo zucchero, quindi unire la farina. Quando il latte si sara' intiepidito rimuovete la scorza di limone e unitelo a poco a poco al composto di uova, sempre mescolando e facendo attenzione che non si formino grumi. Rimettere sul fuoco e portare ad ebollizione sempre mescolando. Una volta addensata la crema, coprite con una pellicola a contatto in modo che non formi una pellicola in superficie. Lasciate stiepidire leggermente, versatela sulla base della crostata e livellate con il dorso di un cucchiaio. Lasciate raffreddare completamente prima di guarnire con frutta fresca a vostra scelta. Per non far annerire la frutta io uso della gelatina alimentare in bustine: si fa bollire in acqua e poi si versa/spennella sopra la crostata in modo da coprirne la superficie in maniera uniforme...et voilà!


PS: scusate per la foto, non è delle migliori..e nemmeno la torta...la preparazione risale ad anni fa, ma è l'unica di cui ho conservato uno scatto...La prossima volta sarò meno tirchia con la frutta! ;)

A taste from the Balcans: Banitsa (or баница)

This recipe is a typical Bulgarian meal that I discovered in the last couple of years, and that I really like a lot! It is basically composed of layers of phyllo pastry alternated with a mixture of eggs, yogurt and cheese...super tasty!! It is supposed to be eaten for breakfast, accompanied by Ayrian, a yougurt-based drink, or Bosa, a sweet drink derived from cereals, like for example wheat and rye...but I wouldn't put any time constraint..I would eat this at all times! ;)

Ingredients:

1 bag of phyllo pastry (10 sheets)
300 gr white cheese*
60 gr butter
4 eggs + 1 yolk
2 tea cups yogurt**

*White cheese in Bulgarian is called "sirene" (or сирене), and it is a feta-like cheese. So, feta will do as well in case you can't find the original ;) 
**Same as before, Bulgarian yogurt, particularly thick and velvety, is to be preferred, but Greek yogurt can be used as well. 

The preparation is very easy: melt the butter and mix half of it with the yogurt, the eggs, the crumbled white cheese and a pinch of salt. When crumbling the cheese don't make it too small, you want to keep some chunks to bite on while eating the Banitsa! Also note that the white cheese is quite salty on its own, so be careful!
Brush the bottom of a baking tray with part of the remaining butter, lay a sheet of phyllo pastry and with the help of a brush spread some butter on it. Add 2-3 more sheets, brushing each of them with butter before putting the next one on top, then pour part of the mix you prepared being careful to cover the corners. Cover with 3-4 layers of wet phyllo pastry, and repeat until the mixture is over; the outermost layer has to be dough. Spread an egg yolk on top of the Banitsa  (I actually just put some leftover mixture) and bake at 200° for about 40'.

Another procedure you could implement is to put all the melted butter in the mixture, and alternate only one sheet of dough with a thin layer of mixture, until this is over, the last layer being phyllo pastry. You can do it either way, it is a matter of taste, I guess. Unfortunately I haven't experimented enough with this dish to advice for one of the two ways, maybe some of you guys could give me their opinion!

One more option is to add some yellow cheese (in Bulgarian kashkaval, or кашкавал) to the mixture..I think somethink like Italian scamorza will be ok, just grate some and mix it with the other ingredients, maybe reducing a little bit the amount of white cheese...I would also add some black pepper or, even better, some nutmeg (I apologize to all the Bulgarians that will be outraged by this last statement..forgive me :P ).

UN ASSAGGIO DAI BALCANI: BANITSA (o баница)

Quella che vi presento oggi è una ricetta tipica della Bulgaria, della quale sono venuta a conoscenza un paio di anni fa, e che mi piace davvero molto! Si tratta di una torta salata composta da strati di pasta fillo alternati a un composto di formaggio, yogurt e uova..davvero saporita! E' un piatto da consumare a colazione, accompagnato da Ayrian, una bevanda fredda a base di yogurt, o Bosa, anch'essa bevanda ricavata da cereali quali miglio o grano...ma perche' porre vincoli, io la mangio pure a cena! :P

Ingredienti:

1 confezionie di pasta fillo (10 fogli)
300 gr formaggio bianco*
60 gr burro
4 uova intere + 1 tuorlo
2 tazzine da thé yogurt**

*Il formaggio bianco bulgaro si chiama "sirene" (or сирене),ed è piuttosto simile alla feta, che potrete utilizzare in alternativa, nel caso in cui trovare l'originale sia complicato ;) 
**Come sopra, lo yogurt bulgaro, particolarmente cremoso e vellutato, è da preferirsi, ma lo yogurt greco andrà benissimo lo stesso. 

La preparazione è molto semplice: sciogliete il burro e  mischiatene la metà con lo yogurt, le uova, un pizzico di sale e il formaggio bianco sbriciolato. Non riducete il formaggio a pezzi troppo piccoli, vogliamo pur masticare un po', e attenti al sale, il sirene ne contiene gia' parecchio di suo.
Spennellate il fondo di una teglia da forno con parte del burro fuso, e adagiatevi un foglio di pasta fillo; sempre con l'aiuto di un pennello bagnatela con del burro fuso. Sovrapponete altri 2 o 3 fogli, avendo cura di ungere ciascuno di essi con il burro, quindi versate parte del composto in modo da coprire bene i bordi. Continuare alternando 3 o 4 fogli di pasta a parte dell'impasto, terminando con la pasta fillo. Cospargere lo strato più esterno con un tuorlo d'uovo (io in questo caso ad essere onesti ci ho messo l'impasto che era rimasto nel fondo della ciotola..non si butta niente!) e infornare per 40' a 200°.


Ecco la foto di una fetta; scusate se è sfocata ma mi sono dovuta sbrigare a farla prima che la Banitsa venisse divorata! :D

Un procedimento lievemente differente prevede di versare tutto il burro fuso nel composto di uova, yogurt e formaggio ed alternare un solo foglio di pasta fillo ad un sottile strato di ripieno..potete fare in entrambi i modi, è una questione di gusti. Purtroppo non ho avuto modo di sperimentare abbastanza da potervi dare un consiglio in merito, ma magari qualcuno tra voi può provare e farmi sapere che ne pensa! ;)

Un'altra possibilità è quella di aggiungere del formaggio a pasta gialla (in bulgaro kashkaval, o кашкавал) al composto..credo che della scamorza bianca vada bene, grattugiatela ed aggiungetela al composto di yogurt, magari abbassando un po' la quantità di formaggio bianco...io aggiungerei anche del pepe nero, o, ancora meglio, della noce moscata (mi scuso con i puristi per questa blasfemia :P )
